It’s been a while since I had a house full of mini cupcakes. I got to make these for my godson and his girlfriend’s baby shower. They requested lemon and funfetti, but I had free rein on the rest of the flavors. I also made chocolate chip cookie dough, red velvet, caramel apple, white chocolate raspberry, peanut butter cup, and dirt cake.

I have not decorated a sugar cookie since late 2024. With all of my surgeries last year, I didn’t have the strength to roll out dough.

Meet the Ope!

This cookie was inspired by the Midwest classic: Snicker apple salad. The cookie dough is filled with vanilla pudding and bits of Snickers and granny smith apples. It’s stuffed with more Snickers, apples, and marshmallows, and topped with caramel, Snickers, and a dried apple.
