Dearest friends of the bakery,
Agapé Bakehouse will temporarily be closing beginning Thursday, January 15th until further notice as we prepare to move to our forever location and homestead in Montana.

This season has felt like a whirlwind! So much has happened since arriving from Okinawa just 6 months ago and we have so much to do in the next 6 months. We just arrived in Oceanside, but as with many things in military life moves happen quickly and often come with both joy and sadness.

I'll continue baking for the next few days before packing begins. Please feel free to stop by and stock up on your favorite breads and baked goodies before the closure. I'll also be sharing the best ways to store your products so they can last up to 3 months in the freezer.

Thank you from the bottom of my heart to each of you—new friends and long-time supporters alike—for encouraging and supporting a small business with the big dream. Your kindness has meant more to me than I can say. I'm looking forward to settling in and will be sure to take you along for the journey as I set it all up and begin again.

Rebel feeding..

The sourdough starter is both the key to a good bread rise AND the most controversial topic in the baking community. We can talk about flour type, brands, protein percentages and on and on but how you feed your starter is not the sticking point.

When I teach my students about feeding and maintenance I tell them that it isn't the ratios of flour to water that matter as much as the consistency of your starter. Yes, how often you feed it matters. Yes, missing a feeding or not putting it in the fridge if you're not going to use it matters. But ultimately if you are so focused on ratios and math then it's going to be overwhelming and a hard stop for most people.

So what do I do? If I am going to use it the following day, I'll give it two big heaps of bread flour and filtered water until the consistency is a thick oatmeal batter. It should be slightly chunky, not watery and push back on your spatula a bit. Not going to use it the following day, I like to feed a bit more flour to water so the little organisms have more to feed on. This will slow down the time they convert it to lactic acid and then I'll pop it in the fridge until the night before I need it.

I hope this helped anyone who is haunted by this step. It's really as straightforward as focusing on the thickness of your starter when you feed and when in doubt, use the fridge to slow fermentation. Remember, it's just flour and water, you can always start over.
