Pumpkin 🎃 Cookies with a little help from recipe Roll-Out Sugar Cookies. These cookies are fantastic on their own with no frosting/adornments but they would be delicious with frosting as well. My kiddo however requested that they remain plain. So, here they are flying solo.

It’s been a while since I posted anything I’ve baked, but it was time to break my silence. Today I sought comfort through my baking. It’s been tough the last few days for our family—-we lost 11 Marines in our USMC family to a su***de bombing in Afghanistan on August 26, 2021. 11.

I’m a military spouse—-part of the small, tight knit community of the Marines by way of my husband. To loose 1 let alone 11 in our family is really hard.

Today I did comfort baking. I went through the routine of reading a recipe and then the calming process of measuring, mixing and pouring before putting my creation in the oven. Then I waited as it baked and I reflected on our families loss and what it looks like for the rest of us left behind. Healing and forgiveness take time. They aren’t the work of a moment and sometimes our grief never truly ends. Only time will tell.

I don’t know if those who died liked Banana Nut Bread, but it’s always something that’s brought me comfort. It’s warm, soothing and familiar. Something easily shared with family or friends. It’s comforting. Today, I baked a Banana Nut Bread in honor of 13 lives lost (11 U.S. Marines, 1 U.S. Navy and 1 U.S. Army) on August 26, 2021. It brought comfort but it won’t fill the void.

Today was hectic but is my therapy and always helps center me among the chaos.

I was doing a test run for baking. I’m a little behind, but I have this adorable baby bunny cake plan and when this recipe popped up in my inbox I had to try it out.

What better time than March to bake a delicious loaf of Irish Soda Bread.

I am a huge fan of Irish baking and Irish Soda Bread is one of my favorites. Soda bread is also pretty forgiving, so if your a novice it’s a great place to start.

In the past I’ve made a more Americanized version of Irish Soda Bread (as in more sugar), but this time I went for a more authentic representation. I used Irish-style flour because Irish wheat is softer than American wheat (who knew—-the more you know). I used Irish-style flour as well as their Irish Soda Bread recipe. While this recipe isn’t fully a true Irish Soda Bread (it’s still been Americanized a bit) it’s truer to its Irish ancestry than most.

Stay turned for more Irish breads in the future. I’m a huge bread Baker at heart.
