We'll be closed today and tomorrow.

To be honest, we realized that adding extra hours was a mistake. We were already working long hours every day to be open for just three days, which is why we cut the schedule back in February so we could be consistent.

We will be open this Friday and Saturday only.

We’ve prepared a huge batch of everything you love, so we truly hope to see you then!

Being a true family owned Mom and Pop business has many challenges. Especially when Mom or Pop end up not feeling well, it really impacts the ability to operate. We will be unable to open today Tuesday 4/14 for this reason, but will plan to start the posted new hours on Wednesday 4/15.

We have some big news!

We have been listening to your feedback, and the most common thing we hear, is that you want to see us more often for your favorite bagels and coffee! To make that happen and ensure we are here for the long haul, we are expanding our hours.

Starting Tuesday 4/14, our new hours will be:

*Tues, Wed, Thurs: 9am – 2pm
*Fri – Sat: 9am – 4pm

I know some of y’all will be upset about Sundays, and we’re so sorry, but we miss actually going to church, and our kids do too.

***To prepare for this expansion, we will be closed this weekend.*** This was a very difficult decision, but this “reset weekend” is essential for us to prepare and transition to being open to the public five days a week, while still balancing our local accounts. We are using this time to prep an even wider variety of sweets, new bread options, and some exciting additions we think you’ll love.

We are so grateful for your continued support, and we cannot wait to better serve you!

Gosh you guys, I owe you all an apology (and an update), I put a sign on the door and completely forgot to make a post about what my lovely birthday surprise was yesterday.

Yesterday was supposed to be a simple morning of finishing sweets and rolling bagels so I could spend my birthday with my family, but life had other plans.

When I walked in, the smell of dough hit me first, and to my horror, our main fridge, the one that holds all of our sourdough and bagels, had warmed up overnight. Everything inside was overproofed and unusable. We lost our entire inventory in one go.

We were not able to open today because of this, nor tomorrow (Saturday). We are beyond frustrated by this situation and not being open. The fridge is new, so we are hoping that the repair this afternoon at 3:30 gets it back up and running quickly. If all goes well, I will be in early Saturday morning rolling fresh dough so we can reopen Sunday at 8am.

Starting from scratch means we will not have sourdough this weekend unfortunately, but we will have other fresh loaf breads available.

This has been a frustrating setback on top of an already challenging season for our family, but we are doing everything we can to keep rising from the punch downs to continue to show up for this community. Thanks for bearing with us.

Gosh, we've been too busy to post, but we have two new things!!

First up! I haven't found the quality of lox that I am looking for yet to offer sandwiches, so, I made a cream cheese! It has lox, cucumber, red onion, scallion, a small amount of capers, dill, and lemon.
*I tried it on an onion bagel with sliced tomato and some extra red onion and it was de-lish!!

Next is the Mexican Hot Chocolate bagel inspired by the Mexican hot chocolate ice cream from our top supporters Ocala's Chocolate and Confections It has dutch cocoa, cinnamon, marshmallows, chocolate chips and cayenne.

As promised, here is an update on our hours.
FRIDAY and SATURDAY 8A-4P
SUNDAY 8A-2P

First and foremost, we want to thank you for sticking with us. February brought some personal hardships and challenges that led to inconsistent hours, and we truly appreciate your patience and patronage during those unexpected closures.

To ensure we can provide the quality and consistency you deserve, we will be closed Thursdays, for the time being. This has been the one day that we have been consistently inconsistent and this is because we do not have any days off – we may be closed to the public, but we are still here working; as for the shorter hours, I start my workday at 10pm while the world sleeps, and I am here until we close the doors for the day and clean up. So this change allows us to balance the needs of our accounts, prep for a busy weekend of service, and *most importantly* prioritize our three young children.

Night Owl is a true “Mom and Pop” shop. Right now, it is just my husband and I handling every facet, and our oldest sometimes jumping behind the register to work on her math and spelling skills! Each bagel and loaf of bread is hand cut and hand rolled, no machines are used - patience, skill, passion and a deep joy are put into everything we do here. While we would also like to have a larger pastry selection, we learned we are at our best when we focus on what we do uniquely: authentic hand-rolled bagels and traditional, European style slow-fermented breads - that craft takes time. We are a bread bakery where everything is scratch-made on premises, fresh with clean ingredients. As we grow, so will our pastry options!

These “growing pains” are part of our journey, and we are working hard to find a sustainable rhythm that keeps our ovens running for years to come. But to ensure we can show up for you (and our family), we are moving to a focused weekend schedule. Our goal is to expand these hours as soon as we have the right tools and team in place!

We also hope to have our website back up and running soon with online ordering to make things easier for you.

We are excited to see you every Friday through Sunday! Thank you for keeping the dream alive and being on this journey with us, we appreciate all of the love and support – we’ll see you this weekend.

Morning, everyone! ☀️

We had a bit of a rough night with some equipment issues in the kitchen. 🔧 To make sure we can be in full service rather than operating on limited menus, we’re pushing our opening time back just a bit so we can restock and prepare what was lost.

🕒 We will be opening our doors at 10:00 AM today. But we will try to get open sooner and will post an update before 10 if so!

A quick update: We will be closed this Friday (2/27), but look forward to seeing you Saturday (2/28) and Sunday (3/1) from 8 to 4.

It has been an immensely tough month for our family, which has created some unavoidable challenges. We sincerely apologize for the shifting schedule and are really grateful for everyone who has continued to show up, check in, and support the bakery through it all.

We’ll post more updates early next week to keep our hours clear and start the new month off strong.

Hi Everyone, Just in case you don't want to read this, we will be open tomorrow (Sunday) 7am-4pm.

I am so sorry we had to close unexpectedly yesterday and today, and that it took me until now to update why.

I couldn't look at my phone until recently. I couldn't even think. I have been getting debilitating migraines for 30 years, and I have had them under control for a few years now. They've gone from weekly to monthly, then after my last child, I got piercings that there are studies on possibly helping, and they do! 95% of the time, I have been able to take medicine and it dulls it down to a headache, or gets rid of it completely, it has been life changing. This one came out of nowhere and I didn't eat anything that would have triggered it. I think with losing someone so important to me, and the financial stress of closing, and then messing up because of not thinking about the holiday was just a recipe for disaster. I had to abandon ship at 5am Friday when I was hit suddenly with the pain and nausea. I am lucky I made it home. This is by far the worst migraine I have ever had, and then lucky me, it didn't get better but instead switched to the other side and started symptoms all over (something that has only happened one other time in my life). My migraines are the worst, I would rather give birth 100 times than deal with 1 migraine, that's how bad the pain is. I am recovering today, with some slight pain and intolerance to light and sound still. I am very sorry we couldn't open.

I do have all of the bread and bagels for the weekend in the cooler that unfortunately cannot stay until next week, so it all has to be baked off tonight for tomorrow, it is A LOT, because of this we are amending hours for tomorrow (Sunday) and will be open 7a-4p. Please come help us clear our shelves!

Hey y’all! I have to apologize for the late notice, I was really trying to work my magic, but I have had to face reality: We will be closed tomorrow (Thursday).

Basically, I forgot about the holiday, and our delivery didn't arrive until yesterday afternoon. Since bagels and sourdough both require a long, labor-intensive process, there just aren't enough hours in the day to get both ready for Thursday morning. I rolled bagels all day, and I am working through the night on sourdough and sweets to make sure everything is perfect for the weekend.

I'm truly sorry for the inconsistency, I'm learning to juggle the schedule better. We'll be back at it Friday & Saturday (8-4) and Sunday (8-2). We’ve adjusted our closing times slightly to spend irreplaceable time with our kids. Thanks for supporting this small family business! Look forward to seeing y'all Friday! 🫶🥯

To make sure we’re fully prepped for the Valentine’s Day rush tomorrow, we’ll be closing early today at 4:00 PM.

Speaking of tomorrow... we’re flying solo without childcare, so your favorite little helpers will be joining us at the bakery! We will also be closing at 4:00 PM tomorrow (Feb 14th) to get them home for some family time.

Come say hi to the kids and grab your treats before they’re gone! ❤️
