The cake went so fast I didn't get a good photo! But that's ok, it was worth it 🤤

Ginger cake (made with fresh ginger), molasses syrup in between layers, spiced cream cheese icing, all topped with white chocolate molasses ganache. It's like a slice of autumn! So yummy 😋

Is everyone else staying sane by baking as well? 😅
Between cooking new recipes for lunch/dinner and baking, the quarantine has kept me in my kitchen, and I'm not complaining about it a bit. Not to mention the results of everything have been super tasty - especially these lemon poppyseed muffins.
What have you guys baked and cooked while staying at home?
