Three Kings Cake/Rosca de Reyes! Happy Epiphany! We celebrated this year’s Epiphany with this “cake” - and the three kings popped by for a visit, too!
“Cake” is written because this is an enriched bread, akin to cinnamon rolls. “Rosca” in Spanish can refer to a ring shape, or as a wreath for the kings. I like to think of it as a yummy bread shaped as a crown for the [four] kings. 👑 The recipe from was a must, completed with modifications that I wanted.
Kid approval: 2/4 - one did not like the nuts, and overall preferred icing atop.
Adult approval: 1.5/2: hubs liked it better with some icing - I enjoyed it as-is.
Mod’s:
• Dough - added cinnamon, cardamom, and a pinch of cloves.
• Filling - increased x2, swapped granulated sugar for dark brown sugar, x2 cinnamon and added 1/4 tsp of cardamom and 1/8 tsp cloves, omitted the orange zest and subbed 1/8 tsp of orange blossom water to the melted butter (in addition to almond and vanilla extracts to the butter), and for add-ins used chopped toasted pecans, chopped maraschino cherries dried and tossed in flour, and Cherry Jammy Bits.
• From the Tips section of the recipe, made the glaze but the sugar did not fully dissolve so it could make a shiny “crown-like” look.
