Three Kings Cake/Rosca de Reyes! Happy Epiphany! We celebrated this year’s Epiphany with this “cake” - and the three kings popped by for a visit, too!

“Cake” is written because this is an enriched bread, akin to cinnamon rolls. “Rosca” in Spanish can refer to a ring shape, or as a wreath for the kings. I like to think of it as a yummy bread shaped as a crown for the [four] kings. 👑 The recipe from was a must, completed with modifications that I wanted.

Kid approval: 2/4 - one did not like the nuts, and overall preferred icing atop.
Adult approval: 1.5/2: hubs liked it better with some icing - I enjoyed it as-is.

Mod’s:
• Dough - added cinnamon, cardamom, and a pinch of cloves.
• Filling - increased x2, swapped granulated sugar for dark brown sugar, x2 cinnamon and added 1/4 tsp of cardamom and 1/8 tsp cloves, omitted the orange zest and subbed 1/8 tsp of orange blossom water to the melted butter (in addition to almond and vanilla extracts to the butter), and for add-ins used chopped toasted pecans, chopped maraschino cherries dried and tossed in flour, and Cherry Jammy Bits.
• From the Tips section of the recipe, made the glaze but the sugar did not fully dissolve so it could make a shiny “crown-like” look.

Pumpkin cheesecake with graham cracker crust - the filling from recipe Pumpkin Cheesecake with Gingersnap Crust.

Pumpkin is a 24/7 365/yr delight for me. The texture of this cheesecake was smooth, silky, simply divine. 🤤

Kid approval: 4/4
Adult approval: 1.5/2 - hubs would like to have more crust.

Mod’s:
• Swapped gingersnap for graham cracker crust because it was on-hand.

Morning muffins created with the guide of the recipe, Basic Muffins, from . I wanted a versatile recipe to throw in whatever I have on-hand - and this one understands the assignment.

Kid approval: 1/4 - one didn’t like the pecans, one didn’t like these at all, and the other just doesn’t care for them.
Adult approval: 1.5/2 - hubs liked them, but nothing more.

What did I end up with?
• Flour: 1 cup instant oatmeal, 1/2 cup climate blend flour (whole wheat), 1/2 cup + 1 Tbsp all-purpose flour.
• 2 eggs swapped out for 1/2 cup of unsweetened applesauce.
• Granulated sugar swapped out for 1:1 of maple syrup (this is the + 1 Tbsp for the all-purpose flour for the extra moisture).
• Added 1/2 tsp pumpkin spice.
• Added 1 Tbsp of flax seed.
• Added 1 tsp of turmeric.
• Mix-in’s were frozen blueberries, frozen raspberries, and chopped toasted pecans.
• Used olive oil for the vegetable oil.
• Topped with a sprinkle of Swedish Pearl Sugar.

This batter made 16 muffins. Personally, I’m thrilled with this recipe and enjoy these muffins. 😋

Kids pizza night! The Easiest Pizza You’ll Ever Make recipe from . This is always a fun evening for the family. ☺️

Notes:
• I forgot for this round to place parchment paper first before the dough. It makes life x1000 easier to transfer from table to oven. When ready to bake, I cut the parchment as close to the crust as possible.
• I don’t have a pizza peel, so I use a cookie sheet to transfer.
• All of these are baked on stone with the parchment paper in between the crust and stone.
• We enjoy lathering melted garlic butter on the crust immediately out of the oven.

I only had one PSCL this past fall because I couldn’t justify $10 for a super-sugary drink more than once. What I could accept was this recipe a few times over.

Kid approval: 4/4
Adult approval: 2/2

Mod’s:
• Doubled recipe to bake in 9”x13” pan.
• Reduced sugar by 1/2.
• Doubled amount of spice.
• Swapped 2 eggs for 1/2 cup of more pumpkin purée.
• For the glaze, swapped water for the milk, omitted espresso, added 1/4 tsp of vanilla extract, added 1 packet of chai tea (yes, just cut open the tea bag and poured it in 😉)

Tip: prep the chai glaze one day ahead for the spices to soak in and amp up the flavor.

Kid approval: 4/4
Adult approval: 1.5/2 - hubs doesn’t like how easily the crumb crumbles.

Mod’s:
• Replaced all-purpose flour for bread flour.
• Added 1/4 cup of water.
• Beat in mixer for 5min instead of 1min.
• Brushed with butter once out of the oven.

We wanted the crumb to be more “sturdy” and spongey vs the original recipe. It was more spongey and only slightly less crumbly.

Spreading on these slices not recommended but sure is tasty. 🤭

Pistachio Cake with Pomegranate Glaze by from 💚🩷

Gorgeous bold and bright colors with flavors of pistachio, orange, and rose water.

Kids who enjoyed it: 4/4
Adults who enjoyed it: 2/2

Adaptations:
• I do not own a large food processor, so I used my small one to blend the pistachios, sugar, orange zest. Transferred to a larger bowl and finished the instructions with a hand blender.
• I had shelled salted pistachios, so I de-shelled and omitted the salt in the recipe.
• I did not purchase pomegranate juice, but crushed and sieved a handful of pomegranate arils.

Cupcakes for Daughter2 from last month. 💕 She wanted light pink frosting and rainbow sprinkles. 🌈✨ I baked some cake mixes, dolloped homemade Ermine frosting, and the birthday girl glammed up her cupcakes to celebrate at school. For transport, I used some dollar foil trays at the grocery shop: one large tray with a lid and two 6-well cupcake/muffin tins fit perfectly in the tray - AND the lid closed with the tins inside. I don’t know if I was more excited about making the cupcakes with the birthday girl or discovering the transport solution. 😅

Two birthdays in the same week. ❤️🩷 Two 1/4 sheet cakes, one cake vanilla and one chocolate from mixes! Cakes frosted and layered with color of choice ermine frosting (KAB recipe). Sprinkles were by the birthday kids! Finished with a lazy piping of straight Nutella because it works and we needed to get to the party. 😅
