🚧 final look in progress 🚧

“All major theme parks have delays. When they opened Disneyland in 1956, nothing worked!” — John Hammond, Jurassic Park

Dorthy may not be a theme park, but opening a new business almost never goes off perfectly. 😂

And our Grand Opening was decidedly… UN-grand.

Which is actually pretty comical when you think about it.

Dorthy should be one of the simplest food trucks in the industry:

🍪 Pre-packaged cookies
🍋 Lemonade
🧊 Iced drinks
🥤 Slushies

That’s it.

No fryers. No grills. No ovens. No complicated cooking equipment.

And somehow… EVERY SYSTEM SAID NOPE. 😂

So, after her second run, Dorthy is back at the commissary while we troubleshoot, make some adjustments, and get her operating the way she was always supposed to.

We’ve got 10 days.

Ten days to work out the kinks before we hit the ground running for the rest of September and straight through October.

Was it the Grand Opening we imagined? Absolutely not.

But new businesses have setbacks. New equipment has growing pains. And sometimes the simplest plans turn into the biggest adventures.

We’re learning. We’re fixing. And we’re moving forward.

Dorthy will ride again. 🍪🐝

Well… that was certainly Dorthy’s UNgrand Opening. 😂🤍

I don’t have a single picture from yesterday, and honestly, that probably tells you everything.

Every time we solved one problem, another appeared. But somewhere in the chaos, I looked around and realized something:

I wasn’t doing this alone.

The “dads” broke out their tools, crawled around Dorthy troubleshooting, ran for oil, and tried everything they could to find solutions.

The moms hugged me and tried to calm my devastated heart.

And my friends jumped behind the counter, took orders, handled sales, and kept things moving while I focused on fixing problems, and not turning into a pile of mush.

As alone as I’ve felt lately, yesterday reminded me that I’m not.

Our community didn’t stand back and watch. You jumped in and held us up.

It wasn’t the Grand Opening I dreamed of, but I walked away incredibly grateful for the community we’ve been blessed to be part of.

Thank you from the bottom of my heart. 🤍

Now we have two weeks to get Dorthy sorted out.

Then? FULL STEAM AHEAD. 🐝

One of the biggest questions we get: Wait… you bake from HOME?! 😂🍪

Yep! For almost 10 years, The Speakeasy Baking Co. has operated as a permitted Cottage Food Operation (CFO) here in California. That means we can legally produce approved, lower-risk foods like our cookies, brownies and certain cakes from our home kitchen.

But there’s a whole world of desserts that require additional food-safety controls and refrigeration, hello cheesecake + tiramisu 👀 and that’s where a permitted commercial/commissary kitchen comes in.

As our little bakery grows, so does what we’re able to create.

Home kitchen ➡️ commissary kitchen ➡️ more delicious things coming your way.

And YES… we’re already dreaming up the menu. 🤤

🍪 HIP HIP HOORAY — IT’S COOKIE PICKUP DAY! 🍪

Good morning, sweet friends! Today’s the day! 🎉 Cookies are officially heading home with Timber Point Elementary students, and we are BUSY pulling, packing, and getting all of those sweet orders ready!

COMMUNITY SUPPORTER ORDERS:
If you selected pickup at The Playhouse, please note that those orders will not arrive at The Playhouse until later this afternoon. If you have some flexibility, tomorrow will be the best day to pick up while we focus today on getting all of our school orders packed and sent home with students. 💕

And most importantly — THANK YOU! 🥹🍪

A HUGE shoutout to Timber Point Elementary and our absolutely incredible community for showing up and supporting this fundraiser. Every order, share, and cookie purchased made a difference, and we are so grateful you chose to support our local school while enjoying a little something sweet.

We can count on one hand the number of times we’ve had to cancel or postpone orders in nearly 10 years of business.

Unfortunately, today is one of them. 🤍

I’m pretty sure I came down with food poisoning, and one of the hardest realities of owning a small business is that when you’re the person behind all the things… when you get sick, your little world quite literally stops moving.

There’s no calling in sick. No one to cover your shift. No backup baker waiting in the wings. And as much as I absolutely HATE disappointing our clients, sometimes you have to listen when your body gives you no other choice.

So today’s Fall Tasting Box pickup has officially been postponed to August 29th.

If you preordered a box, please check your email for all the details. We’ve also sent a follow-up text to make sure everyone received the update.

I am so incredibly sorry for the last-minute change. I know people rearranged schedules and made plans around today, and that’s the part that makes this the hardest.

Thank you for giving this very tired, very sick small-business owner a little grace today. 🤍

Now, back to bed I go. 😭

When these photos come back, they are ALWAYS some of my favorites. 🥹🤍

There’s just something about the dip, the kiss, and our couples perfectly framed by their dessert display that gets me every single time.

You spent all that time dreaming up the sweet details of your wedding day… you absolutely deserve a photo right in the middle of them. ✨

So yes, if we’re at your wedding, I will probably be telling you: “Now dip her and KISS!” 😂🤍

The photographers usually roll their eyes at my request and reluctantly will oblige. But I can tell you EVERY SINGLE TIME, it will be part of your sneak peek photos aka- their favorite moments and perfectly framed images.
