I've been asked how I can bake such large quantities and keep things fresh...well, with plenty of planning and preparation.

The day before bake day, I pre-measure all the necessary ingredients and put things together so I can grab, mix, and bake.

Tonight I measured out the ingredients for 16 cinnamon sugar donuts, 16 blueberry scones, 16 chocolate chip scones, 24 peach blueberry muffins, 24 strawberry muffins, 24 apple fritter muffins, and 12 cinnamon rolls...tomorrow is bake day!

This is what 6 dozen muffins look like during the planning stages...these will have different mix-ins to create the multiple flavor profiles.
