Grease Themed Sugar Cookies

I made a half batch of gluten free sugar cookies using a 1-1 gluten free flour with xantham gum. 3 cups 1-1 gluten free flour, 1 tsp baking powder, 1/2 tsp salt, 1 stick unsalted butter, 1 cup granulated sugar, 1 tsp vanilla extract, 1/2 tsp almond extract, 1 large egg. Bake at 350 for 11 minutes. Cookies are 3/8 thickness using a guided roller

Quick “Back to School” cookies for the office

Chocolate Chip Cookies:
1 cup cold and cubed unsalted butter,
3/4 cup brown sugar,
1/2 cup granulated sugar,
2 tsp vanilla extract,
2 large eggs,
2 3/4 cups all purpose flour,
1 tsp baking soda,
3/4 tsp salt,
2 cups chocolate chips (semi sweet and dark chocolate).

Bake at 375 degrees for 13-15 minutes (3 tbsp sized balls of dough).

4 sticks unsalted butter
2 cups granulated sugar
2 tsp vanilla extract
1 tsp almond extract
2 large eggs
1 tsp salt
2 tsp baking powder
6 cups all purpose flour

Cream sugar and butter first. Add the rest of the wet ingredients. Mix dry ingredients in separate bowl, then slowly add to mixture. Mix until just combined and you can’t see flour. Roll to desired thickness, I use 3/8 guided rolling pin.

Cook at 350 degrees for 10-13 minutes. I do 11, or until the top of the cookie isn’t shiny.
