Vegetarian pies are especially important to us here at Flaky Crust Pies because my sister, Spencer, is a vegetarian! Here we are at a pie class in Boston. We always have at least one vegetarian pie and hand pie available. This month’s options are Chickpea Curry Pie and Artichoke + Spinach Hand Pies.

Fun Fact: “Spence” helped us in the beginning when we were starting out and she even came up with the name Flaky Crust Pies! Thanks Spence 😁

A chess pie is a traditional southern pie made with simple ingredients like eggs, butter, sugar and flour or cornmeal. There’s lots of theories on how this pie got its name (our personal favorite is someone said “it’s just pie” in a southern accent!) We make a lemon variation that’s thickened with cornmeal.
