95Β° todayβ¦ so I am hiding inside, pretending itβs fall, and making pumpkin bread in my skeleton shirt πΆππ€£ And yes, those are the 10 cans of pumpkin I bought while getting groceries today because I am SOOOO ready for fall baking π
INGREDIENTS:
1 (15 oz) can pumpkin
1 cup granulated sugar
Β½ cup packed brown sugar
2 large eggs
Β½ cup vegetable oil
1 tablespoon vanilla extract
1 ΒΎ cups all purpose flour
1 tablespoon pumpkin spice
1/2 teaspoon cinnamon
1 teaspoon baking soda
Β½ teaspoon salt
INSTRUCTIONS:
Preheat oven to 375Β°F. Grease a 9Γ5 loaf pan and line with parchment paper (or line a muffin tin with liners- this makes about 15 regular sized muffins).
In large bowl, whisk together the pumpkin, sugar and brown sugar. Beat in vegetable oil, vanilla extract, and eggs. Add flour, pumpkin pie spice, cinnamon, salt, and baking soda directly on top of the wet ingredients. Mix until just combined!
Pour batter into prepared loaf pan and 50-55 min. If you are making muffins bake for about 20 min!
