Serge hard at work. Being one of the youngest he is surely one of the senior members, who gets his recognition not from being "boss's kid", but from knowledge, kindness, and impeccable work ethics.
Special shout out to all my younger crew who basically did an amazing job holding up the fort this busy Saturday. Many videos about Gen Z employees that are rather hurtful than helpful. Raising up your team members is like raising your kids, but instead of being a parent with unconditional love you have to be a leader and a mentor. Am I good at it, not always but I put my sincere attention at recognizing all the wonderful moments, and embracing them. And you know what? Doesn't matter your generation - everyone blossom when they know they are seen for what they do. More good moments you collect easier it is to get through hard moments. Their wins make you happy. And my only goal is to do what I love in a happy place.

Only one day a week for a slow morning. It's precious.
I am the one who is the morning person, I love this morning magic in the kitchen. I have been doing it for 18 years in my home kitchen for my family. And in the last 18 month it has changed. I creat at the bakery in early morning hours, and my family came up with their own morning routine. But one day a week I am able to spend time with them, and spoil all of us with a special breakfast, not because i have to, but because I love it.

PopTarts and Irises
Our raspberry poptarts were picture perfect this morning. Vegan poptarts, made with 100% local organic flour, fresh jam made in our kitchen, glaze that has raspberry juice and organic powdered sugar, sprinkles that has no artificial dyes. Everything is made exactly how it was intended - real and full of flavor.
Irises are just beautiful in the way it was intended by the nature.

We have been making exceptional espresso drinks since we've open November 2024, because Anastasia is passionate about an exceptional espresso drink to accompany the array of offered baked goods.
Freshly roasted beans from , organic milk, organic half&half, oat or pistachio milks as an alternative option, housemade syrups from wholesome ingredients, hot, iced, decaf, shaken.

We haven't been making it into any of the coffee shops lists lately, but those who know, know.
Being loud doesn't always mean to be mentioned everywhere and every time, but by delivering up to par every single time.

We are asked quite often whether we make any gluten-free items. Our kitchen isn't gluten-free.
For the bread we only go as far as "long fermented sourdough made with local organic flour" loaf, and it is suitable for minor gluten intolerance.
Desserts and sweets are a different story. We have three items that are made with gluten-free ingredients and one that is gluten-free and vegan.

Here is our list:
*Basque cheesecake, original recipe has very minimal amount of flour, so it was a very seamless switch to gluten-free flour

*Pavlova Roll cake, not traditional Merengue cups filled with cream, but rather slices. No flour in the recipe at all, so it is naturally gluten-free and so good. You try it oce and you find yourself thinking about it.

*Financier, a classic French almond tea cake, but we make it exciting and range flavors, but it is always a nut flour, and a grain gluten-free flour.

*Almond Blueberry cookie, our own creation, a cousin to our mountain and forest cookies. Made with rolled oats, almond flour, GF flour, dried blueberries, sliced almond and a little bit of orange zest (like a happy kiss on a cheek)
All items are created for those special people in our life that have to follow the GF path, I have a couple and they know I care.
