Occasionally, I get the opportunity to make cakes with a little something extra tucked inside, and I'm always excited when those requests come in!

Over the years, I've made homemade lemon curd, raspberry filling, and strawberry filling for lemon, vanilla and chocolate cakes. While a classic cake is always delicious, these fillings add an extra layer of flavor that takes each bite to the next level.

The bright tang of lemon curd, the sweet-tart burst of raspberry, or the fresh flavor of strawberry can completely transform a cake and make it feel even more special. I don't know about you, but I'm a big fan of the added flavor and surprise these fillings bring!

Sometimes the cream cheese frosting does exactly what I want it to, and when it does, the moment deserves to be memorialized. ❤️

Cream cheese frosting is easily the most challenging frosting I work with. It's softer than buttercream, even when chilled, and it has a mind of its own when it comes to temperature changes. Some days it keeps me on my toes, and other days it rewards me with a smooth, beautiful finish like this one.

This chocolate cake paired with cream cheese frosting is such a classic combination. Rich chocolate cake layered with creamy frosting creates the perfect balance of flavors, while the flecks of real Grade A Madagascar vanilla bean from my homemade vanilla bean paste add a touch of elegance and incredible flavor.

One of the requests I receive most often is for dairy free options.

When I first started getting those requests, I was honestly a little hesitant. Gluten free and dairy free baking can be tricky, and I never want to offer something that doesn't meet the standards I set for my cakes and cookie cakes. But thanks to the encouragement (and frequent requests!) of one of my wonderful regular customers, I've spent time testing and perfecting dairy free recipes that I'm proud to offer.

Over the last year, I've successfully made dairy free versions of chocolate, cookies & cream, lemon, carrot, red velvet, and yellow cakes, along with my chocolate chip cookie cakes. It's been such a joy to be able to provide treats that help more families celebrate special moments together.

For those in the gluten free community, I wanted to share a resource that many people have found helpful.

Gluten Dude has created an app that helps users find restaurants that have been vetted for gluten free dining, making it easier to navigate eating out with greater confidence.

Right now, he's offering a lifetime membership for the cost of an annual membership. If this is a tool you've been considering, it may be a good opportunity to take a closer look.

Building and maintaining resources like this takes a tremendous amount of work, and I always appreciate seeing businesses and advocates dedicated to making life a little easier for those of us navigating a gluten free lifestyle.
