Rosh HASHANA is the Jewish New Year from sundown Sept.13 - sunset Sept 15. Challah bread is baked every week for the Jewish Sabbath or Shabbat. For Rosh Hashana, the Challah is made with a little extra honey for a sweet new year. Instead of the usual long braid a round braid is made to represent the year being round. It also looks like a crown, for the crowning God as King on Rosh Hashana. There are also traditional Challah shaped like ladders, keys, and birds that have symbolic meaning that echo Bible verses or represent things you want to have in the new year.
