Every Chinese fruit cake (水果蛋糕) lover has a backstory 🍰🎂
For me, it was the cake our family had at every birthday, anniversary, graduation, party, or celebration in general
To the point that on my 18th birthday, I specially chose a non-Chinese fruit cake (but still Asian bakery cake) to have instead *just* to try something new
(It was disappointing tbh)
Shortly after my 18th birthday, I became vegan.
It was a lifestyle shift that changed everything for me— a lifestyle that was so resonate with everything I believed to be true and good in the world.
But that meant sacrificing the nostalgia and deliciousness of some of my childhood favorite foods that connected me to my Chinese roots 🥺
…. Or so I thought
A few years into being vegan and moving to LA, I discovered restaurants that made vegan Beijing duck wraps, dim sum, moon cakes, dumplings and steams buns, and so much more!!!!
That paired with my lifelong love for baking and cooking sparked an idea
“Can my favorite Chinese bakery items be recreated plant based?”
I started with the char siu bao & nailed it. All time favorite savory bun. ✅
Next, the classic bolo (pineapple bun) that still to this day I find so funny because there’s no actual pineapple in it— and mastered that. (Okay to be completely transparent… I still think I can do better but it’s pretty damn delicious) ✅
Then, one of my go-tos… the Swiss roll slice. Sadly, this is still in the works as an eggless sponge cake is quite difficult to roll 🙃❌
But then, the FINAL BOSS

And guess who made it completely plant based and so incredibly delicious and nostalgic I almost cried and most definitely gave myself a tummy ache from eating almost the whole thing??

I’ve since adapted it slightly and now, it’s the soul staple of Zen ☯️

I’ve only ever had raving reviews & while that may mean I just haven’t fed enough people to find a critic yet, I like to believe it’s because it truly is just THAT good.
