Hi everyone!

​First off: thank you so much for the incredible love and busy mornings lately!

​Because so many of you are stopping in early, we wanted to share how our mornings actually run:

​Everything here is crafted by hand in small batches. Because we work with living doughs, kitchen temperature and proof times change how every morning unfolds. Combined with limited oven space and a small, dedicated team, our cases don’t fill up all at once the second we open at 8:00 AM.

​Instead, we run on a rolling bake schedule:

​We arrive at 3 AM to bake our first loaves and start proofing pastries and remaining doughs.

​We open the doors at 8 AM with a fresh first wave from the ovens alongside our full coffee service.

​Pastries, breads, and daily specialties continue rolling out as they are ready to bake and hit the racks.
....

​With that in mind.... We are trying something new this week: no menu post. This gives our team the flexibility to bake with the kitchen's natural flow.

(And also helps us dial in our production so we can add more days to our schedule ASAP!)

​So, come by this weekend, say hi to our amazing staff, and see what’s fresh on the counter!

A gentle reminder from our small team:
We operate with a small crew and a minimal footprint. While our doors open at 8:00 AM, some items roll out in waves throughout the morning as they come out of the oven. We cannot guarantee a specific time something will be on the counter due to a multitude of factors but we will do our best to have things out ASAP! Thank you so much for your patience!

Another gentle reminder on bread slicing:
We cannot slice bread while it is still warm. Slicing warm loaves crushes the crumb (making it gummy) and damages our bread slicer. Even if the crust feels cool to the touch, the core often retains heat for several hours.

Reminders Before You Visit
⏰ While we aim to have a huge spread ready right at 8:00 AM, dough has a mind of its own! Everything depends on natural proofing times and oven capacity. If it’s not ready for the oven, it stays in proofing—we never rush the process, so thanks for bearing with us as fresh bakes come out throughout the morning!

🍞 Bread Slicing: If you pick up a warm loaf during the first couple of hours after opening, we won't be able to slice it for you just yet. Warm sourdough is still setting inside—slicing it too hot makes the interior gummy and can damage our slicers. Let it cool at home first, and it’ll reward you with the perfect slice!

We’re a small batch bakery with a small, dedicated team. Depending on how our dough proofs and how long things take in the morning, not every single item will be ready right at 8 AM. We always do our best to start the day with a great selection, and we so appreciate your patience as fresh batches come out throughout the morning!

🍞 Warm Loaves & Slicing
If a loaf is still warm out of the oven, we won't be able to slice it for you just yet—it protects our slicer, but more importantly, it keeps your bread from getting gummy and ruining that perfect loaf!

To be completely real with you all, it’s been a busy week behind the scenes! We’re actively tweaking our staffing and production schedules so we can balance everything smoothly and keep pacing ourselves. We are so grateful for this amazing community.
