Newly added to our list is a delicious sourdough focaccia, fresh out of the oven. Current available toppings include shredded mozzarella, garlic & herb, and jalapeno cheddar, but if you have any specific requests I can make it happen.

$6 per loaf, $2 each for pre-cut 3x5" sandwich slices.

I'm realizing just how much I enjoy breads, and how hard it is to find artisanal ones in our area. Well, I'm here to help fix that.

It's been a busy few months. Class has been consuming the majority of my time, but it's been one of the most fulfilling things I've ever been a part of. I'm going to make the time to put myself out there to the world though; I want to try and show off the beautiful works I've been making and hopefully start getting them into the hands of those that want them soon.

This was actually my first attempt at a cheesecake, and it turned out wonderfully. The texture was smooth and creamy, and the topping had a gorgeous mixture of a savory dark chocolate and sweet blueberry.

Laminated pastry is quickly becoming one of my favorite mediums through which to express my culinary creativity. Puff pastry, being savory and flaky, provides an interesting base for sweet fruits.

This week was the class's first real delve into the real uses of chocolate in the pastry world. We worked on a number of recipes, including a buttercream and a few merengues. The one I was most proud of though, was our dark chocolate caramel ganache. It turned out thick and savory, with a gorgeously silky dark texture. I'm very excited for the coming weeks when we start working more with decoration with our devilish creations.

I'm not super happy with the way the plate decoration turned out - I still haven't gotten a huge amount of practice with the art of decorum. I'm still working on it, though.

The pastry turned out gorgeously, a beautiful golden brown with a crisp, flaky texture. The lamination layers puffed well and the taste is absolutely fantastic; a wonderful combination of salty, buttery pastry and sweet, silken filling. Laminated pastry is turning out to be one of my favorite niches in the baker's repertoire partially because of the detail involved in the process, and the creative possiblities of the flavor involved.
