Creamy Sausage Tortellini Soup:

1 pound cooked sausage
1 package tortellini
6 cups chicken broth
1 can evaporated milk
1 teaspoon red pepper flakes
1 teaspoon basil
1 medium onion diced
2 cups raw spinach
2 tablespoons minced garlic

Brown sausage and onion in a frying pan. Combine chicken broth and tortellini in a sauce pan and cook until tortellini is done. Add in sausage, onion, evaporated milk, garlic, spices, and spinach. Boil for 3-5 minutes until spinach is wilted and serve.

Apple Cinnamon Cruffins

1 package of premade croissants
1 can apple pie filling

IF YOU DON’T HAVE PIE FILLING:
1 1/2 apples sliced thinly
2 tablespoons butter
2/3 cup brown sugar
1 tablespoons cinnamon
Juice of 1/2 a lemon
1 tablespoon cornstarch
2 tablespoons water

In a saucepan combine first four ingredients and let simmer. Mix together water and cornstarch and add to saucepan continue to let cook until it has thickened to pie filling consistency.

Crumble top
3 tablespoons brown sugar
2 tablespoons butter melted
3 tablespoons rolled oats
3-4 tablespoons flour

Preheat oven to 350° Lay out the croissant rolls flat into 4 rectangles. Then smoosh together the perforations. Put the pie filling spread thinly on top of the croissants and roll the croissants up long ways. Cut the croissants in half again long ways. Roll into cinnamon roll shape and placed into a greased muffin pan. If making the crumble topping place on top now. Place pan in the oven for 12-15 minutes. If you do not make the cumble topping you can make a simple icing out of milk and powdered sugar and ice after they are done baking. I couldn’t decide if I wanted icing or crumble so I did both. 🤷🏻‍♀️

One of my personal favorites Cranberry Chicken Salad!!

The meat from 1 rotisserie chicken shredded
1/2 cup craisins
1/3 toasted sliced almonds
2 stalks of celery diced
1/3 cup plain Greek yogurt
1/2 cup mayonnaise
Salt and pepper to taste
(Optional: 1/2 cup onion diced)

Mix all the ingredients together and store in the fridge. I like to use this for lunches for the week can be served on crackers, on a croissant, in a wrap or just simply eaten plain. Enjoy 😊

Protein Blueberry muffins!

2 cups flour
1 1/2 tablespoons baking powder
2/3 cup flour
1/2 cup vanilla protein powder
1 teaspoon salt
1/2 cup sugar
2/3 cup oil
1/4 milk
2 eggs
1 cup Greek yogurt
1 teaspoon vanilla
1 1/2 cups fresh blueberries

Preheat oven to 375°
Mix together wet ingredients
Slowly mix in the dry ingredients (except blueberries)
Gently fold in the blueberries last
In a greased muffin pan spoon the batter in until about 3/4 full place in the oven and bake until the tops are golden brown. Cooking time will vary based on the size of muffins you’re making.

I will definitely be adding in lemon zest next time to change it up but they are very good.

Crock pot chili!!!
Ingredients:

1 pound sausage
1 pound ground beef
1 medium onion
1 jalapeño
1 poblano pepper
2 cans diced fire roasted tomatoes
2-3 cups beef broth
2-3 cups tomato juice
1 can red kidney beans
1 can pinto or chili beans
2 tablespoons garlic
1/2 tablespoons smoked paprika
2 tablespoons chili powder
1 teaspoon cayenne pepper

In a skillet brown the meat. While the meat is browning dice up the vegetables and put in the crock pot add the broth tomato juice and spices. Turn the crock pot on low. Once the meat is done drain and add meat. Cook on low for 6 hours.

Crab Rangoon Recipe!!!!

1/2 package of wonton wrappers

Filling:
8oz cream cheese softened
4 imitation crab sticks minced
1/4 cup green onion chopped
1 tsp sesame oil
2 tsp soy sauce
1 tablespoon sugar

Mix together the filling ingredients. Place 1 tablespoon of filling in each wonton wrapper and seal the edges with water then fold the corners to each other

Pumpkin cinnamon rolls

Ingredients

Pumpkin Cinnamon Roll Dough

4–5 cups all-purpose flour, divided
1/3 cup granulated sugar
4 1/2 tsp instant yeast (2 packets)
1 tbsp cinnamon
1 cup whole milk
1/4 cup unsalted butter, sliced
1/2 cup canned pumpkin puree
1 large egg

Pumpkin Butter Filling

1/4 cup unsalted butter, room temp
1/4 cup canned pumpkin
2/3 cup light brown sugar, packed
1 1/2 tbsp ground cinnamon

Cream cheese frosting
1 8oz brick cream cheese
2 cups powdered sugar
2 tsp vanilla
1 stick butter

1. In a bowl add 2 1/2 cups flour, sugar cinnamon and yeast.
2. Microwave milk until warm about 105° I think I did 1 minute and stirred. Melt the butter as well
3. Add in butter and milk and mix well dough will be very sticky.
4. Add pumpkin and the egg
5. Add the rest of the flour 1/2 cup at a time until dough is no longer sticky when it becomes too hard to do with spatula mix with hands.
6. Roll out into rectangle until the dough is 1/4” thick
7. Make the filling. Most recipes call for melting the butter, brushing it on and sprinkling on the cinnamon sugar. However, I have had best luck with mixing the butter and cinnamon sugar mixture into a paste and spreading an even coating. If you want to add more pumpkin to this and I highly recommend it then, add 1/4 cup of canned pumpkin to the mixture before adding it using a paper towel to squeeze out extra moisture.
8. Roll the dough on the long side. I like to start with the side closest to me and roll up 3/4 of the way then fold over the top this prevents filling from spilling out.
9. Cut about 1 1/2” thick I like to use dental floss this prevents the rolls from getting smushed. Take the floss and put it under the cinnamon rolls log the cross the ends of the floss
10. Place the rolls in a greased 9x13 pan cover and let rise for 1 hour.
11. Preheat oven to 350° place the pan in the oven for about 20-25 minutes until the tops start to brown slightly
12. Remove from oven and add cream cheese frosting. (Frosting recipe can be halved however I like to have more than enough.

Buttery beer bread
3 cups flour
1 tablespoon baking powder
1/4 cup sugar
1 teaspoon salt
12oz beer
1/2 stick butter melted

Preheat oven to 350°
Mix together flour, baking powder, sugar, salt and beer
Add two tablespoons butter to the bottom of a bread dish coat the bottom and sides of the dish
Pour in bread batter
Top with remaining butter
Bake for 50-60 minutes

My version of jambalaya
Ingredients:
2 tablespoons olive oil
1 packages smoked sausage slices
1 medium yellow onion (not sweet) chopped
1 green pepper chopped
2 cloves of garlic chopped
2 stalks of celery
2 cans of diced tomatoes
1 cup rice
3 cups chicken broth
1 pound shrimp
4 imitation crab sticks
Kickin chicken season to taste
Cajun season to taste
Thyme to taste

(Meats can be substituted with what you like)

In a stock pot add olive oil brown sliced sausage and cook shrimp set to the side. Add vegetables and spices cook until onion is translucent and celery is tender. Add in rice and mix well until rice is well coated with oil. This helps the rice from sticking to the bottom of the pan add in tomatos and chicken stock stir well. Add back in cooked meat and crab sticks. Continue cooking on simmer until rice is cooked stirring occasionally.
