🍋 It's finally time! I've been waiting patiently to add lemon recipes to the menu when the weather warmed up. Well, spring is here, and so are cupcakes with lemon icing!

The cake part of these little desserts is a vanilla cake which pairs perfectly with the citrus icing. And they can be ordered gluten free! Here's the info:

RECIPE REVIEW
Recently I was given some duck eggs, and I really wanted to experiment with them in baking. In my research, there were MANY recipes using this type of egg in sponge cake. So of course I had to make a strawberry shortcake!

The eggs worked wonderfully, and the cake portion came out just about perfect. I added some homemade whipped cream, sliced strawberries, and voila! A simple but delicious dessert. It also went perfectly with the spring weather we have been having in Southern Alabama.
