We took a little time off to enjoy Oregon summer with family and friends-and apparently came back with ideas. Our guest maddie gardner from Portland introduced us to her summer Elote obsession, and we were inspired by the Elote Nacho special Fire On The Mountain

So naturally...we made a Street Corn Croissant.
Its a very limited batch, and Maddie gave it an enthusiastic thumbs up.

Find us at the Newport Farmers Market this Saturday and give one a try-along with plenty of Kouign Amann, Morning Buns, Croissant, Chocolate Silk, Creme Fraiche Cheesecake, and other How We Roll favorites.

Hello, Pastry Pals!

A little heads-up for this weekend: we have family visiting from out of state, so we’re taking Sunday off to enjoy some time together.

It never gets old.

Nearly every time Roy pulls a particularly good-looking pan from the oven, he stops, looks at it and says some version of, “Those are beautiful.”

Mind you, he’s been baking professionally for decades. He knows what a croissant looks like. 😂

But there’s still something pretty satisfying about seeing all that mixing, rolling, laminating, proofing and waiting turn into a rack full of beautiful pastry.

And yes, Roy. They are beautiful. 🥐

People often ask how we manage everything that goes into a market weekend.
The honest answer? We don't do it alone.
This week, we helped a friend move hay. We also promised another friend we'd lend a hand with their move. Meanwhile, our own yardwork kept slipping further down the to-do list, so we hired a friend to help us get caught up. Thanks Coby Retherford!
That's how community works.
Sometimes you're the one showing up with work gloves. Sometimes you're the one asking for help. Either way, we're all a little stronger because we're willing to show up for each other.
Farmers markets are built on that same spirit. Neighbors supporting neighbors. Small businesses supporting one another. Friends lending a hand when it's needed most.
We're grateful to be part of a community that believes in lifting each other up—and we hope that spirit shines through in everything we bake.

Meet the newest member of our family...Archie!
This week's doughs are brought to you by Archie, our new Pizza Arch SM40 TX spiral dough mixer.
Our trusty Hobart has served us faithfully for years and isn't going anywhere. Its still the perfect mixer for our cheesecakes, Chocolate silk, Shortbread, scones, and many of the other pastries you enjoy each week. But when it came to mixing our large croissant doughs, we were asking a little too much of an old friend. Things were getting noisy... and a little too hot.
Enter Archie.
After just a few batches, we're already impressed. The dough is smoother, the mixing is gentler, and the most demanding part of our baking just got a little easier.

If we haven't been as social lately... blame the hustle. 🥐
This week has looked something like this:
Get the butter croissants into the proofer.
Is that smoke? 😳
Replace the proofer module... only to discover the plug doesn't fit the outlet.
Swap the outlet. Success! Croissants are proofing.
Throw to the dogs.
Harvest the strawberries. So. Many. Strawberries. 🍓
Trim, rinse, freeze, and make room for more dough.
Cut the garlic scapes.
Throw to the dogs
Pick the peas—skinny ones for stir-fry, plump ones for shucking.
Bake the scones and shortbread so tomorrow can be all about croissants.
It's supposed to rain... should we bake less? Nah. We've learned a little Oregon rain doesn't keep people from good pastry.
We'll be up early baking, and we'll be bringing plenty of buttery layers to the market. We can't wait to see all our pastry pals this weekend.
Bakery life doesn't stop at the bakery.

Its market day and we’re bringing Rum Balls — rich little bites made from our scone dough with raisins, cocoa, and coffee liqueur, rolled into something deeply chocolatey, a little boozy and just a tad indulgent.

Although more common during the holidays, they are perfect with coffee, perfect after dinner, and honestly… perfect anytime.

A little change in plans for this weekend

Out of respect for a family funeral, we will unfortunately miss Saturday’s Newport Farmers Market.

We will be at the Lincoln City Sunday Market on Sunday with plenty of pastry, and we’re looking forward to spending a little time with our market community then.

Thank you, as always, for your kindness and understanding. Hug your people a little tighter this weekend, and we’ll see you Sunday.
