After completing almost 20 years at the University of New Hampshire, it was time for a new adventure...
So I went back to my roots, back to baking bread. I love the immediate feedback one gets when making something by hand. The feel of bread, the smell of bread baking and the taste! I feel very lucky to be able to make food for others to enjoy.
I bake in a medium sized wood fired masonry oven. Managing such an oven is a great adventure in itself. My bake day is driven by the temperature curve of the fired oven. I like to think of it as riding a wave.
The ingredients I use making bread are all organic. The flour and seeds are sourced as locally as possible, so that my bread is part of a local economy that benefits all of us as people and the ecosystem we are part of. I like to use as much whole grain flour as I can and consequently also offer 100% wholegrain loaves.
