Strawberry Angel Cake
Ingredients
9 egg whites
100 g flour
200 g sugar
1 pinch of salt
1 teaspoon vanilla extract
250 g fresh strawberries
200 ml heavy whipping cream (for whipped cream)
A little strawberry coulis
Preparation
Preheat the oven to 180°C (350°F).
Beat the egg whites with a pinch of salt until stiff peaks form.
Gradually add the sugar while continuing to beat.
Gently fold in the sifted flour and vanilla using a spatula.
Pour the batter into an ungreased pan and bake for 35 minutes.
Let the cake cool upside down before removing it from the pan.
Whip the cream until it forms whipped cream.
Serve each slice with a generous spoonful of whipped cream, sliced strawberries, and coulis.

Ingredients:

Cookies and Cream Cake Batter:
3 cups (382 g) all-purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
8 tbsp (113 g) unsalted butter, room temperature
2 cups (400 g) granulated sugar
1/4 cup (60 ml) vegetable oil
1/4 cup (60 g) sour cream
1/2 tsp vanilla extract
1 cup (240 ml) whole milk
6 large egg whites (about 198 g)
16 Oreo cookies, chopped

Cookies and Cream Mousse:
1 cup (170 g) white chocolate, chopped
1 cup (240 ml) heavy cream, divided
1/2 cup (113 g) cream cheese, softened
1/2 tsp vanilla extract
4 Oreo cookies, finely chopped

Cookies and Cream Frosting:
10 tbsp (141 g) unsalted butter, room temperature
1 cup (226 g) cream cheese, room temperature
4 cups (500 g) powdered sugar
1/4 tsp salt
2 tsp vanilla extract
1 cup pulverized Oreo cookies, divided

Ganache Drip:
2/3 cup (113 g) chopped semi-sweet chocolate
1/2 cup (120 ml) heavy cream

Instructions:

Cookies and Cream Cake Batter:
Preheat the oven to 350°F (175°C). Grease and line the bottoms of three 8-inch cake pans with parchment paper circles.
Grease the parchment and the sides of the pans.
In a small bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat butter for 30 seconds. Add granulated sugar and vegetable oil, beat for 2 minutes until creamy.
Mix in sour cream and vanilla extract until combined. Alternate adding milk and dry ingredients in thirds, beginning and ending with the dry ingredients. Mix until just combined.
In a separate bowl, whip egg whites until stiff peaks form.
Fold half of the egg whites into the cake batter, then fold in the remaining egg whites along with chopped Oreos.
Divide batter evenly among the prepared cake pans.
Bake for about 35 minutes, until a toothpick inserted into the center comes out clean.
Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Cookies and Cream Mousse:
Before assembling the cake, prepare the mousse. Place chopped white chocolate in a bowl.
Heat 1/4 cup of heavy cream until hot, then pour over the white chocolate. Stir until melted and smooth. Let cool completely.
In a mixing bowl, beat cream cheese until smooth. Add the cooled white chocolate mixture and beat until combined.
In another bowl, whip the remaining 3/4 cup heavy cream until stiff peaks form.
Fold whipped cream and chopped Oreos into the cream cheese mixture.
Chill in the fridge while preparing the frosting.

Cookies and Cream Frosting:
Using a mixer, beat butter for 30 seconds.
Add cream cheese and beat together for 1 minute.
Add powdered sugar, salt, and vanilla extract. Mix on low until combined, then increase speed to medium-high and beat for 2 minutes until creamy.
Mix in 1/2 cup of pulverized Oreo cookies until fully incorporated.
Adjust consistency with additional powdered sugar or milk if needed.

Ganache Drip:
Place chopped semi-sweet chocolate in a bowl.
Heat heavy cream until hot, then pour over the chocolate. Whisk until smooth and creamy. Let cool for 10-15 minutes until slightly thickened.
Transfer ganache to a piping bag or use a spoon to drip along the edges of the cake layers.
Pour remaining ganache over the top of the cake, using a spatula to spread evenly.

Assembly:
Place one cake layer on a serving plate. Brush with sugar syrup if desired.
Pipe a ring of Cookies and Cream Frosting around the edge of the cake layer. Spoon Cookies and Cream Mousse into the center and spread evenly.
Repeat with remaining cake layers, frosting, and mousse.
Frost the top and sides of the cake with Cookies and Cream Frosting.
Press remaining pulverized Oreo crumbs onto the sides of the cake.
Chill the cake for 30 minutes to set.

Decoration:
Pipe additional frosting on top of the cake and decorate with halved Oreo cookies and more cookie crumbs if desired.

Storage:
Refrigerate the cake for at least 4 hours before serving.
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.

Notes:
Adjust ganache thickness by cooling or warming as needed.
Optional sugar syrup can be used to keep the cake moist; boil 1/2 cup sugar with 1/2 cup water, cool before use.

🍓 The Easiest Strawberry Cake Ever! 🍓
Perfect, creamy, and bursting with fresh strawberry flavor! 😍✨
(I used a 24 cm cake mold.)

Ingredients:
✨ Ladyfinger biscuits
✨ 1 kg fresh strawberries (keep a few aside for decoration)
✨ 1/2 cup sugar (≈ 100 g)

Tip:
Cook the strawberries on low heat until the mixture thickens and becomes jam-like. 🍓🔥

Cream Layer:

450 g mascarpone (or any cream cheese)

1/2 L fresh cream (whipping cream)

1/2 cup sugar (≈ 100 g)

Important:
I used unsweetened cream.
If you use sweetened cream (like Hulala), reduce the sugar by half → only 50 g.

Assembly tip:

Mix 1 cup milk (≈ 150 ml) with the strawberry syrup that you strained (as shown in the video).
Dip the ladyfingers, layer with cream, add strawberry jam, and chill.

INGREDIENTS:

115 g semisweet chocolate (you can use dark chocolate too)
2 butter spoons
1/3 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup of wheat flour
1 tablespoon cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Chopped walnuts (optional)

INSTRUCTIONS:

1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. In a microwave-safe bowl or small saucepan over low heat, melt the semisweet chocolate and butter together. Stir until smooth. Let cool slightly.
3. Add the granulated sugar to the chocolate and butter mixture, and mix well.
4. Add the egg and vanilla extract to the mixture and stir until well incorporated.
5. In another bowl, sift together the flour, cocoa powder, baking soda and salt. Add these dry ingredients to the wet mixture and stir until you have a smooth dough.
6. If you wish, you can add chocolate chips and chopped nuts to the dough and mix gently.
7. Using an ice cream scoop or two spoons, place mounds of dough on the baking sheet, leaving enough space between each cookie.
8. Bake in the preheated oven for about 10-12 minutes, or until the cookies are firm on the edges but still a little soft in the center.
9. Once baked, remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

1 cup all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup buttermilk, room temperature

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

½ cup hot water or brewed coffee (for richer flavor)

For the Fudge Layer:

1 can (14 ounces) sweetened condensed milk

1½ cups semi-sweet chocolate chips

2 tablespoons unsalted butter

1 teaspoon vanilla extract

For the Chocolate Mousse Layer:

1½ cups heavy whipping cream, cold

8 ounces semi-sweet or dark chocolate, melted and cooled slightly

2 tablespoons powdered sugar

1 teaspoon vanilla extract

For the Topping:

1 cup whipped cream or chocolate ganache

Chocolate curls or cocoa powder (for garnish)

Directions:

Prepare the Chocolate Cake Layer:
Preheat your oven to 350°F (175°C). Grease and line a 9-inch round or square cake pan with parchment paper.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add buttermilk, oil, eggs, and vanilla extract; mix until smooth.
Stir in hot water or coffee last—it will make the batter thin but glossy.
Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Just when you thought chocolate cake couldn’t get any better…enter Salted Caramel Chocolate Cake. To make this we combine our all-time favorite chocolate cake with salted caramel icing.

The cake is three layers of soft chocolate cake that gets layered with a sea salt caramel buttercream and finished with an extra swirl of caramel on top.
