What's for breakfast, brunch, lunch, dinner, snack?
Bringing back the kitchen sink wrap. Sauteed onions briefly, added jerk chicken sausage, rinsed chopped kale, cover over low heat 8-10 min to break down crunchy kale. Make sure to season: kosher salt, pepper, garlic, I added a bit of oregano and tumeric too.
Decided to add sweet potatoes home fries so I quickly poached those in a 1/2" water then fried in hot skillet for color.
Warmed a tortilla on the stove. Schmear chipotle mayo down the center, sprinkled shredded cheddar on top. Laid my over easy eggs down and topped with veggie sausage mixture. Wrapped it up! The yolks help create a sauce w the mayo. Delish!
No tortillas? Make a breakfast bowl. Add a drizzle of your favorite condiment. Or hot sauce. A little syrup is good too. Throw some cooked quinoa in there for extra energy.
