I know, I know... I'm the worst at posting, but I HAD to share this clip of my bacon fat chocolate chunk cookies since it gives me just a teeny bit of joy rn. π₯π«πͺ took this stunning video and my small IG algorithm-limited world needs to see how gorgeous he made my baked goods look. And I found a random food holiday I could link this to; March is yayyyyyy... π€·π»ββοΈ We've been at our new place for 2+ months, and I haven't baked anything since a lot of my baking crap is still in storage and insanity is an understatement. But I made these cookies with my stash of bacon fat from all the pandemic snack bacon we've consumed this past year, a frozen pack of brown sugar, a random bag of regular sugar, and a small pack of flour on hand. Oh, and day-after Valentine's clearance chocolates (since when did a little bag of wrapped brand chocolates retail for $12?!) One cookie is covered in home-roasted, hand-cracked cacao nibs from real cacao pods that I just NEEDED to order from and the texture and flavor just pop; the cacao gives such a nice crunch and slight bitterness that balances out the sweetness of the milk chocolate bits in the cookie. That process took forever so I totally understand why cacao and chocolate are $$$ And the bacon fat... game-changing ingredient that makes the cookies smell and taste like heaven. I have been cooking with it and using it in lieu of butter for the past year, and I will never get sick of it. Seriously, if bacon fat ever needed a spokesperson, I'm your girl. The touch of just makes the bacon flavor pop, and there aren't even bits of bacon in the cookie. I don't know about you, but I like my cookie edges slightly crisp and the inside chewy, unlike the brand that starts w a "T" and ends with an "ates" that is just alllll crisp πΆπ I gotta say, this is one of the best cookies ever; if you don't believe me, ask π
