For export, timing the harvest is everything.
At Group Mongajer, we harvest our Ecuadorian Yellow Dragon Fruit (Pitahaya Amarilla) at approximately Maturity Level 2β3.
At this stage, the fruit naturally has a yellow-green coloration β exactly what you see in these photos.
Then the journey begins. βοΈ
As the fruit travels from Ecuador to our clients in the United States, it continues its natural maturation and color development.

By allowing the fruit to develop properly through the supply chain, our clients receive the commercial window they need while the fruit progresses toward that gorgeous bright-yellow Level 5 maturity consumers love. π
