Happy 40th to my sister-in-law, who I’m lucky enough to also call one of my best friends.
While making this post I realized we’re hardly ever in photos together..probably because we’re always doing what matters most..making sure our kids are together and making memories.

Always down to throw a party, mix a cocktail at the beach, be silly, laugh, and just enjoy being together.

Cheers to 40 and many more memories together. 🥂

Italian Wedding 🥣Ingredient List

Mini Meatballs
2 lb Ground chicken
Grated cheese
Parsley
2 cloves of Garlic
Seasoned breadcrumb
2 eggs

Soup
Fresh Spinach (I use 10oz package)
4 - 32oz containers of Chicken Broth/Stock
1 Onion
2 cloves of Garlic
Parsley
Acini Di Pepe 1/3 of box
EVO
Garlic powder
Onion powder
1/4 cup of dry White wine

Make the tiny meatballs and fry or bake them (put to the side)

Sauté garlic and onion with oil (I use avocado oil)

Once the onion & garlic is wilted down and has some color you add the wine ..

Reduce the wine down

Add chicken stock and bring to a rapid boil

Add your spinach

Add the cooked chicken
meatballs at this time ..

Bring to a rapid boil then simmer for 30 minutes
(medium to low flame) I keep it semi covered

Add the pasta at this point (I prefer my soup soupy so less pasta for me) I use 1/2 cup
Add a little garlic powder, onion powder, pepper at this point to taste

Bring back to a boil (10 to 15 minutes)

Ready to plate!

Elevate your pumpkin cheesecake this year with some candied pepitas! This little gems add the perfect crunch to a silky smooth cheesecake. Toss one cup of raw pumpkin seeds with two tablespoons of butter. Add 1/4 cup dark brown sugar and a splash of vanilla. Finish with sea salt. Bake at 300 and bake for about 40 minutes, tossing every 15. When cooled they should be crunchy and I can guarantee they’ll be delicious. 😋
