It’s Librae’s very first Thanksgiving and we are so grateful for the incredible support we’ve received since we opened our doors.
Our wonderful team has been working day and night preparing pies and boxes for you all, we are honored that we could be part of your Thanksgiving table.
We wanted to wish you a very happy and warm Thanksgiving, filled with delicious food, merriment, joy, and hopefully no arguments on the dinner table. From our hearts to yours, however you choose or don’t choose to celebrate.

Here are our special Librae boxes for Thanksgiving weekend!

One to help you along on Thanksgiving Day with brioche rolls, whipped honey butter, a loaf of sourdough, bag of stuffing, cranberry chutney, and chai shortbread cookies.

And one for the day after Thanksgiving — perfect for all those turkey sandwiches you’re going to be making. With a brioche loaf, cranberry chutney, green tahini, labneh mustard, house roasted coffee, and a jar of tahini granola.

We are offering 3 very special pies —
• Apple Cardamom with spiced apple jam and NY apples
• Chocolate Date Pecan with date syrup
• Butterscotch Squash Pie & Torched Meringue with a graham cracker crust and honey nut butterscotch custard

We wanted to introduce you to some of the faces you might see behind our glass kitchen doors at Librae. We simply could not exist without our awesome and hardworking team, they keep us going every single day.

Introducing Arlander - our wonderful head baker and bread master at Librae.

1. Where are you from? NYC, specifically Greenwich village.

2. How long have you lived in NYC? I now live in New Jersey, but have lived in NYC for most of my life.

3. What bought you to Librae Bakery and what’s your role there? I am the head baker. I came to Librae, because I loved the concept and the passion of the owners. Plus, it also feels like coming home.

4. Which item are you most proud of? So much hard work went into every product that picking a favorite doesn’t seem fair. I am proud of everything that we put out.

5. What are some of your favorite ingredients to bake with? I am simple at heart — flour, water, and salt.

6. If you were stranded on an island and could only choose one Librae menu item to eat forever, what would it be? Well if I want to live, I am going with focaccia. It is delicious and has some nutrients as well.

7. When you’re not at Librae, where are you eating? I eat out too often to answer, but nothing fancy and usually vegan.

8. If you weren’t a baker, what would you be in doing in life? I honestly have no clue.

9. Favorite movie? True Romance.

10. Tell us something we don’t know about you? If you don’t know it’s intentional 😋

We wanted to introduce you to some of the faces you might see behind our glass kitchen doors at Librae. We simply could not exist without our awesome and hardworking team, they keep us going every single day.

Introducing Lauren - our wonderful pastry chef and laminating genius extraordinaire!

1. Where are you from? I’m from Statesboro, Georgia.
2. How long have you lived in NYC? 10 years.
3. What bought you to Librae Bakery? Becca tbh! But in all seriousness I’ve been working in restaurants for so many years and always wanted to transition to a bakery setting but nothing else ever felt right. I “met” Andre and Dona via video chat and fell in love with their ideas for Librae. There is so much heart poured into this place that it just felt like the best kitchen for me.
4. Which pastry are you most proud of? I’m proud of all of our pastries, but I’d have to say the croissant is number one.
5. What are some of your favorite ingredients to bake with? I enjoy incorporating herbs and fruits into recipes as often as I can. I love how herbs can balance a sweet jam while helping to build a vibrant flavor profile.
6. If you were stranded on an island and could only choose one Librae menu item to eat forever, what would it be? It’s a toss up between the Espresso Pan Au Chocolate and the Feta Dill Scone.
7. When you’re not at Librae, where are you eating in NYC? I actually rarely go out to eat. My partner is an amazing cook, so most of my meals are at our table. He cooks mostly Mediterranean/Middle Eastern, which is a far cry from what I grew up eating. He does whip up a mean southern dinner when I’m in need of some comfort food.
8. Favorite song? My favorite song changes with where I’m at in life, but Escape by Rupert Holmes always helps me get through a tough day in the kitchen IYKYK.
