✨ "Lemon Curd". Smooth, bright, and perfectly balanced — perfect for desserts or your morning toast.
Ingredients:
• 100 ml lemon juice (2–3 lemons)
• 15 g lemon zest
• 110 g sugar
• 2 whole eggs + 3 yolks
• 100 g butter
• a pinch of salt
Instructions:
In a bowl, gently mix eggs, yolks, and sugar until smooth (do not whip).
Add lemon juice and zest, mix well.
Pour into a saucepan and cook over low–medium heat, stirring constantly.
Cook for about 7–10 minutes until thickened (it should coat the back of a spoon).
Remove from heat and add butter, stirring until smooth and glossy.
Strain if desired for an extra silky texture.
Let cool with plastic wrap touching the surface, then refrigerate.

🍋 Лимонный курд (300 г)
Ингредиенты: • 100 мл лимонного сока (2–3 лимона)
• 15 г лимонной цедры
• 110 г сахара
• 2 яйца + 3 желтка
• 100 г сливочного масла
• щепотка соли
Приготовление:
В миске аккуратно смешать яйца, желтки и сахар до однородности (не взбивать).
Добавить лимонный сок и цедру, перемешать.
Перелить в сотейник и готовить на среднем–слабом огне, постоянно помешивая.
Готовить 7–10 минут до загустения (крем должен покрывать ложку).
Снять с огня и добавить сливочное масло, перемешать до гладкости.
При желании процедить для более нежной текстуры.
Остудить под плёнкой «в контакт» и убрать в холодильник.
✨ Нежный, яркий и идеально сбалансированный вкус — для десертов или к утреннему кофе.

"Le Blackberry Glaze — Silky & Elegant"
Recipe for you — likes & comments from you 💜

Ingredients:
300 g blackberries
100 g water
80 g sugar
1 tbsp lemon juice
7 g gelatin
42 g cold water (for blooming)
Instructions:
Bloom the gelatin in 42 g cold water for 5–10 minutes.
In a saucepan, combine blackberries, water, and sugar.
Cook over medium heat.
Once it reaches a gentle boil, simmer for 2–3 minutes.
Add the lemon juice and stir.
Strain through a fine sieve to remove the seeds.
Add the bloomed gelatin to the hot puree (60–70°C / 140–160°F).
Stir until completely dissolved.
Cool to a working temperature of 34–38°C (93–100°F) before glazing
