Late last year, I bought myself a Recteq pellet smoker. I've made jerky, smoked a turkey, pork butt, lots of chicken thighs, and decided I needed a challenge. I came across a recipe for a smoked s'mores cheesecake, and essentially turned my smoker into an easy bake oven! The graham cracker crust went on first to absorb a good smoky flavor while I made the filling, and it all went right back outside to cook. The final product is more like a custard consistency instead of traditional cheesecake. With a few adjustments to the recipe, I will definitely make this again in the future!
