This clip is from early on when playing with dough and she found the balance that allowed her to hold the dough and roll it out.
So often we hear with pie crust, cookie dough and pastry dough that it either crumbles, or is so soft you canāt pick it up.
The solution here is trial and error, but donāt be afraid to screw up.
Donāt be afraid to over work your dough, and donāt be afraid to experiment with new flours and options.
Remember baking is fun, and most of the time, even when itās a mess you can still enjoy itā¦
Just remember with dough, cold is your friend, even if the resulting dough gives you hand cramps! š¤Ŗ

Let the batter/dough rest!
All flour needs time for the liquid to fully absorb into the mixture. But GF flour needs extra time because the flour grain itself is harder.
This means in order to have moist baked goods that are not hard and dry after cooling, allow the mixed batter to rest in the fridge (we do it overnight) and scoop and drop the next day.
This is also the reason why the process of baking gluten-free can take a little longer. And why a request at 8 am for a 6 pm cake just doesnāt happen.
The basic rule of thumb, is the lighter and fluffier you want your baked good, the closer to 24 hours you want the dough to rest.
So coffee cake, may not need to rest as long as cupcakesā¦ but it should all rest.
