A Little About Me:
I’ve always been the person who strangers feel comfortable talking to, often called "Smiley" because of my approachable personality. But don’t let the sweet demeanor fool you—I’ve got a sharp wit and a love for all things sarcastic! Life’s too short to take it so seriously. Expect plenty of humor and sarcasm sprinkled throughout.

I never thought I’d be writing something like this on what used to be our Surfside Baking Company page…

So many of you knew John through the bakery. You saw us together when you came in. If you got to try his Hawaiian rolls or cinnamon bread you know there is no better.

This page was once filled with cinnamon buns, whoopie pies, laughter, long days, and the life we built together.
Now I’m just trying to figure out how to exist without him in it.

If you knew John, loved him, or even just stopped in and talked with us at the bakery… you were part of our story. And I know you felt what made him so special.

Thank you for the love, the prayers, the messages… I see every single one. I just don’t have the strength to answer them all right now.

I may plan something here in New Bern when everything calms down to remember him. I will keep everyone posted.

Since so many have been asking-here is the super easy whoopie pie recipe!

Classic Chocolate Whoopie PiesIngredients: • 1 box (15.25 oz) devil’s food cake mix • 3/4 cup water • 1/2 cup vegetable oil • 3 large eggs
Filling: • 1 cup (2 sticks) unsalted butter, softened • 2 cups powdered sugar • 1 jar (7 oz) marshmallow creme • 1 tsp vanilla extract
Instructions : 1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. 2. In a large bowl, combine cake mix, water, oil, and eggs. Beat on medium speed until well blended. 3. Drop batter by rounded tablespoons onto prepared baking sheets, spacing about 2 inches apart. 4. Bake for 8-10 minutes or until the edges are set. Let cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely. 5. For the filling, beat butter on medium speed until creamy. Gradually add powdered sugar, beating until smooth. 6. Add marshmallow creme and vanilla, and beat until fluffy. 7. Spread filling on the flat side of one cookie, then top with another cookie.
