It’s happening again! Our Girl Scout Somoa (caramel delight) inspired FRENCH CRULLER for Wednesday, March 8!

These are fried light and airy, dipped in coconut caramel and coated in toasted coconut with a chocolate drizzle!

A traditional cruller is made from pate a choux dough - a mix of water, butter, salt, sugar and bread flour. It relies on steam for its lightness and airy pockets and eggs and flour to set up firm. It’s a classic dough and technique used in the bake shop and we are always happy to fry them, dip them, coat them & drizzle them😍.

Types of Baker's Yeast
Happy National Croissant Day! These labors of love are a staple in our menu offering; these technical, time consuming little bundles of flaky joy are made from scratch everyday in our bake shop.
Some history:
“Legend has it, Viennese bakers working throughout the night heard the Turks as they tried to tunnel beneath the city during a 1683 invasion. They alerted the city’s defenders, in essence saving it from the Ottoman siege. In celebration, the bakers created a pastry that would symbolize the crescent moon, which is also the prominent symbol on the Turkish flag. The German word kipferl, or crescent, became a culinary re-enactment of Vienna’s victory over the Turks.
The first verified evidence of the croissant in France is due to a baker named August Zang. Zang had an upscale patisserie in Paris in the early 1800s, named the Boulangerie Viennoise after his native Vienna and serving many of their famous treats — including kipferl. His Parisian version, though, was made flakier than the traditional sweets, and Parisians began calling them croissants because of their crescent shapes.
Finally, in 1915, a French baker named Sylvain Claudius Goy would write the recipe that we all know and love today, especially as we sit with a warm cup of Joe in the morning.”

Hannah joined our team like the week before we shut down in the early months of Covid. She’s been with me through it all and has continued to push The Baker forward with her can-do attitude, infectious energy, insane ability to do a million things at once and, of course, delicious treats. If you’ve been on our social media, you’ve seen her creations of specialty donuts, twiced baked croissants, and holiday menus (along with so much more unseen work!).
