Its about to be vacation week over at Bunny Cakes so I will not be as easily accessible! My regulars have my number and Ill be sending orders out up until the day we leave!! I want to say how much I truly appreciate every single one of you!!!
I think the thing I'm most proud of when it comes to my business has nothing to do with editorial accolades, news interviews, or even compliments from people I've admired for years in the baking world.
For me, it's the pride I take in every single creation that leaves my kitchen and goes into your hands. It's the trust you place in me when you spend your hard earned money and allow me to be a small part of your special moments!!
Every order receives the same level of time, care, creativity, and attention to detail. And trust me I'm SUPER selective about what I take on. Im not a puppy mill for cakes. While I admire the hustle and growth I see from many of my peers, that's simply not my lane.
I don't do this for financial reasons. I do it because I love to create. I do it because bringing someone's vision to life is still just as rewarding to me as it was when I started. The day that feeling disappears is the day I'll know it's time to stop.
Until then, I'll keep pouring my heart into every cake, cupcake, macaron, tart, and dessert that carries my name bc honestly I feel like Im just getting started!!! We are headed to our happy place! EPIC UNIVERSE 🫶🏼

The very BEST news!! AJ was the very first cake I donated through Icing Smiles! I will always follow his journey! I have the biggest happy tears right now!!!! 🥹💙💙💙

Drum roll please 🥁 After almost 2 and a half years of chemo, scans, shots, stem cells and radioactive treatment we were told there was not much else that could be done other than clinical trials, AJ took a break for the past few months after his score sitting at a 7 from an 18 when we first started. Today on his routine scan checkup he scored a 1! The oncologists were so excited and have not had this happen before as a response this far out from treatment but as far as now AJ doesn’t need anymore treatment and only has to be monitored. AJ -1 Cancer - 0 💪🏼 🎗️ we are so blessed and grateful for this and for everyone who has been there for us thank you so much more than you will ever know for all the prayers and support during one of the hardest times ever ❤️ sending all our love God has been faithful to us hallelujah 🎉 🙏

What an incredible issue! Ill be in their July issue with a special macaron cake!!

Yesterday I shared a traditional cortadillo and talked about why it's not the same thing as the viral dot cake trend.l!
Today, I'm sharing my cortadillo inspired french macaron.
Before anyone asks .....no, I won't be making a dot cake.🤣😬
I'm allergic to basic and trends.
When I create a flavor I want to do more than copy an aesthetic. I want to understand what makes a dessert special and then translate those flavors into a macaron.
So these little guys aren't just pink macarons with sprinkles.
The filling starts with a rich buttercream emulsion buttercream to capture the classic bakery style vanilla flavor and a few other flavor components The center is filled with the signature pink glaze found on traditional cortadillo, to bring in the flavor and texture that make the cake recognizable in the first place. I finished with rainbow nonpareil sprinkles as a nod to the classic Mexican bakery favorite that inspired them.
This isn't a cortadillo and its not trying to be.
It's a French macaron built around the flavors of a traditional cortadillo rather than simply borrowing its colors.
As I said yesterday, I won't be selling cortadillo. If you've never had one, I'd much rather see you visit a local Mexican bakery and support the people who have been making them for generations.
My job isn't to make what everyone else is making. My job is to give my customers something elevated, thoughtful, and worth talking about.
I'm a published cake artist. If I wanted to make what everyone else is making, I probably wouldn't be where Im at today!
So instead, you get cortadillo macarons!!!

I don't do trends. You've heard me say often that I have "trend aversion" and its true.
So when the "dot cake" trend started flooding my feed I honestly rolled my eyes and my reaction wasn't to make one....it was to make a cortadillo.
At first glance I understand why people compare them. They're both colorful, covered in sprinkles, and have that nostalgic look. But beyond that they're very different desserts.
A traditional cortadillo is a Mexican bakery classic made with a soft vanilla cake or sweet bread and topped with a thin pink icing that's much closer to royal icing than buttercream. That icing sets and develops the signature texture that makes cortadillo what it is.
A dot cake is typically white cake layered with thick buttercream and covered in nonpareils.
Same aesthetic? Sure, in some ways
Same dessert? No.
Today Logan (my youngest son) helped me make a traditional cortadillo ( he actually did 90% of the work!🥹)to share and talk a little about its history and why it's been loved for generations...including by my childrens relatives and ancestors **I will NOT be selling the cortadillo*** If you've never had one, I'd much rather see you support a local Mexican bakery and experience an authentic cortadillo from the people and communities who have been making them long before social media got involved.
What I WILL be offering is a French macaron inspired by the flavors of cortadillo!! A tribute, not a replacement. Look out for those tomorrow!
Sometimes a trend is a good reminder to look beyond the algorithm and appreciate the desserts that were already here. ❤️

I see "dot cakes" all over my time line as a new "trend". Its almost like people just discovered nonpareils sprinkles 🙄🤣🤣 Jam cake into a cup and overload it with jimmies/nonpareils 😬
