Over the past year, we’ve made LOTS of Rainbow Swirl cookies - they’re our take on a classic sugar cookie, and they’re a total crowd pleaser! But have you ever wondered how we get that classic multicolor swirl?
Once we’ve made our dough, it’s divided into equal portions (usually three), and each portion is colored separately with gel food coloring. We’ve got to be extra careful not to overwork the dough, but we can’t underwork it either; there’s a fine balance between mixing the color thoroughly and not making the cookies too chewy!
Once we’ve made our colors, we stack them together and flatten them down between two sheets of parchment. Finally, we roll the dough up into a log, the same way you would for a Swiss cake roll. The result? A beautiful swirl when you slice into the dough!
Fun fact: this is one of the earliest recipes we developed, and it’s still one of our favorites to make. We’ve had the privilege of making tons of color combinations, AND this recipe is the base for two seasonal specials - Peppermint Swirl cookies from our Christmas box, and Love Potion cookies from our Valentine’s box!
