Bob’s Oven Bakery officially open and welcomes a new generation of customers to a location that has been beloved by locals and travelers for decades.
This is a brand-new bakery, but it stands on familiar ground.
When the previous bakery, The Oven Bakery, chose to retire after many wonderful years, it felt like the end of an era. Rather than let the ovens go cold, building owner Bob Wilson made a bold and heartfelt decision: start something new — while honoring everything people loved about the past.
The bakery has been completely revitalized from stem to stern, with a full renovation and the latest equipment brought in to support exceptional baking. Even better, the extraordinary team of bakers who helped make this location iconic has returned for an encore — bringing their skill, passion, and deep knowledge back to the ovens once again.
At the heart of Bob’s Oven Bakery is outstanding bread, especially its signature sourdough — deeply flavorful, beautifully crafted, and baked the way great bread should be.

The Sourdough Story: A California Tradition That Still Rises Today.
If there’s one food that truly earned its place in California history, it’s sourdough.
Long before artisan bread became a trend, sourdough was the lifeline of miners, travelers, loggers, and pioneers who came west in search of something better. During the Gold Rush, sourdough wasn't just delicious — it was practical. The natural fermentation helped bread last longer, travel well, and stay fresh without modern refrigeration. In short, sourdough met the moment… and then defined it.
That same frontier spirit still lives here in Mount Shasta. Our mountain town has always been a place where travelers stop to recharge, locals gather to catch up, and good bread is more than food — it’s a small piece of comfort that brings people together.
And at Bob’s Oven Bakery, sourdough holds a special place in our hearts.
Every bakery has its own starter — its own living, breathing culture that gives sourdough its personality. Ours is cherished, nurtured, and cared for daily by our talented bakers, who treat it like the treasure it is. It gives our bread that unmistakable flavor: tangy, warm, complex, and uniquely Mount Shasta.
But there’s another little chapter to our sourdough story… one that feels like a gift from the past.
For nearly seven decades, Bob Wilson’s late wife, Dolores, kept a mason jar of her own sourdough starter in the family fridge. She loved to bake bread, and anyone who knew her remembers the smell of warm loaves drifting through the Wilson home. Dolores often shared her starter with friends and family — and who knows how many kitchens still carry a piece of her legacy?
We like to think that maybe, just maybe, some of Dolores’s starter lives on in the culture our bakers use today. After all, sourdough starters are passed from hand to hand, home to home, heart to heart.
They travel — just like the people who love them.
And if you have a jar of sourdough starter in your fridge — whether it came from a friend, a grandmother, or a mysterious jar that has simply “always been there” — we’d love to hear your story.
