The Morris Area Farmers Market begins this Thursday, June 21 - but Wenzel Baking will NOT be there. I'm out of Morris this summer and visiting family in various parts of the country until August. I'll sell at the Market for a couple of weeks when I return, but until then, please support the market and stay hungry for European-style breads!

Since we're now in the Christmas season, I've decided to try my hand at a couple of traditional European Christmas breads. First up: panettone, an Italian bread made with a commercial yeast/wild yeast blend and containing (in this case) dried apricots, dried cherries, golden raisins, and brandy. It also has a delicious Italian extract called "fiori di Sicilia", the smell of which takes me back to the pastry-shops of Rome. Here's what my mini-panettone look like.

Another experimental loaf: pain au levain, made with 100% wild yeast, 90% bread flour, and 10% rye flour. It developed some odd oven spring so it's a little lop-sided, but otherwise it looks great. I used a wild yeast culture that I grew using the method in "Bread Science" by Emily Buehler.

Another experimental loaf: ciabatta with mushrooms (ciabatta ai funghi). I'd never really thought about putting things into ciabatta before, but the recipe I followed came out well. It was a nice hearty bread good for mopping up risotto.

Quick announcement: I will only be selling at the Morris Area Farmers Market for two more weeks (August 17 and 24). After my experience last year, I've decided that I can't be both an effective baker and effective teacher after classes get going. So get your Wenzel Baking products while you can and, if you're interested in continuing to get fresh artisan bread after August 24, please ask me about my weekly subscription program!

Great news for you Wenzel Baking fans - I've returned from my summer travels and I'll be at the Morris Area Farmers Market on Thursday! Because it's fair weekend and because it's fair weekend and prime vacation time, I'll be baking less product that usual. However, if you'd like to reserve a loaf for pick-up at the market, please let me know by Wednesday evening.

This week's line-up will be:
Ciabatta (~$3.75, depending on weight)
Green olive focaccia ($0.50/oz.)
Pain a l'ancienne ($3/$1.50)
Pane siciliano ($3)
Rosemary fougasse ($5.50/$2.75)
Blueberry English muffin bread ($3/half-loaf).
