What a brilliant idea! How have I never thought of that?!

This has completely changed how I handle my discard!! I no longer feel pressured to come up with new recipes all the time, and I really hate wasting it. So, I’ve started freezing it. I use a silicone muffin tin — the frozen chunks slide out super easily! When I feed my starter, I usually start a new jar. I pour some discard into that new jar to feed, and then I just pour the rest into the muffin tin and pop it in the freezer.
I've used the frozen chunks directly in discard recipes, and I’ve also thawed them, fed them, and successfully turned them back into active starter! You can measure each portion if you want to be exact, but I just eyeball it — they usually end up being about 50–70 grams each.
