I'm Lori, owner of TCY Cookies and More, a licensed commercial baker serving Central and Eastern Kentucky.

I specialize in individually wrapped cookies, brownies, cheesecake jars, and custom treats for businesses, events, employee appreciation gifts, customer thank-yous, and special occasions.

My goal has always been simple: create products that not only look inviting but keep people coming back for the taste.

Whether you've enjoyed my products through one of my retail partners, at a local event, or through a custom order, I appreciate your support.

Here's where I disagree I don't equally swap oil for butter because oil is 100% fat It's non-solidifying which allows baked items to stay moist. Butter can contain upwards 20% water and when that water evaporates it can cause a drying effect. Also, oil is non-flavored, whereas butter in addition to being a fat is a flavor that can compete when trying to get a neutral flavor in baked goods.

Let's Talk About AI and Food Photography.

The images below all started with the same photograph.

Photo 1: Straight from the camera.
No edits. No enhancements. Just the original image.

Photo 2: AI styled.
The food itself wasn't changed, but the background, lighting, and presentation were enhanced to create a more polished scene.

Photo 3: AI manipulated.
The food was altered. Toppings were exaggerated, details were added, and the final image no longer accurately represents what was originally created.

For me, the difference matters.

AI is a tool, just like Canva, Photoshop, a camera, or photo editing software. The tool itself isn't the problem. How it's used is what matters.

I have no issue using technology to improve lighting, create a cleaner background, or present my products in a professional way. What I won't do is use technology to change the product itself or create expectations that the real item can't meet.

When you see a photo from TCY Cookies and More, my goal is simple: what you receive should look like what you ordered.

Technology will continue to evolve. My commitment to honesty won't.

Hello, June. ☀️

If I'm being honest, this year looks a little different than last year.

Business hasn't been quite as busy, and there have been a few challenges along the way. But one thing hasn't changed: my gratitude for every person who continues to support TCY Cookies and More.

Running a small business is filled with highs, lows, lessons, and unexpected turns. Some months are about growth. Some months are about persistence—both matter.

As we step into June, I'm looking forward to new opportunities, new creations, and continuing to serve the customers who have supported me through every season.

Whether you've placed an order, shared a post, recommended my business, or cheered me on from the sidelines, thank you. Your support means more than you know.

Here's to a new month and whatever opportunities it may bring. ❤️

Cast Iron Creations

A lot of folks may not remember, but a while back I started experimenting with what I called my Cast Iron Creations.

One of the biggest hurdles was finding smaller cast iron skillets at a price that made sense. The larger skillets worked well for sharing, but they weren't practical for individual sales.

Fast forward to today. While making a stop at HomeBuys - Morehead , I found exactly what I'd been searching for over a year and a half ago: smaller cast iron skillets at a reasonable price.

That means an idea that had been sitting on the back burner may finally become reality.

Individual Cast Iron Creations could soon be making a comeback.

Throwback to one of my favorite creations.

These Strawberry Lemon Mini Pound Cakes combine bright lemon pound cake with a sweet strawberry topping and a simple lemon glaze.

At the time, I made them because the flavor combination sounded good. Looking back, I think they would be perfect for pop-up events too. They're easy to enjoy on the go, full of flavor, and a little different from what people typically expect to find at a bakery booth.

Who knows? Some creations deserve a second chance.

Restock Update

Due to the limited range of motion, restocks will be split up over the coming week.

Monday's delivery to Elliott’s Pizzeria will include cheesecake jars and brownies. Additional restocks will be announced as they're scheduled.

Slow Down Sunday 💚

Not everything in life has to happen fast. Some things are meant to unfold step by step…with intention, with faith, and with patience.

Pray.
Set the vision.
Do the work.
Stay humble through it all.

And then…do it again.

But today, in the middle of all that—slow down long enough to breathe, to reflect, and to be grateful for where you are right now.

You don’t have to have it all figured out today. You just have to keep showing up.

Just thinking out loud...

What would you think about seeing TCY Cookies and More do occasional pop-ups and collaborations with food trucks, coffee vendors, and mobile beverage businesses?

Imagine grabbing your favorite coffee, lemonade, milkshake, or specialty drink and pairing it with a fresh cookie, brownie, or mini breads.

Would that be something you'd be interested in seeing? Have you ever attended an event where two small businesses teamed up?

It looks like I might need to have my car magnets made.
