Megan once took the time to tell my story, and I was honored to have her write a feature about me and TCY Cookies and More. Today, I get to return a little of that support by sharing hers. 💜

Today, I get to wear one of my favorite hats: author.

I’m a featured author at the Appalachian Literary Arts Festival happening today in Morehead, and I would LOVE for you to come see us!

In the thick of my postpartum depression journey, I sat down and wrote a novel.

Then I wrote another.

And another.

And another.

Four novels later, I still think it’s a little wild that this is something I get to say I’ve done. Writing became a way for me to create something when I was struggling to find my way through a pretty difficult season.

And while my day job is communications and my side hustle is all about helping other people tell their stories, writing novels reminds me why I love storytelling in the first place.

Different kinds of writing. Same love for a good story. ❀

As we prepare to launch direct ordering on September 1, we want to clear up something you may start noticing about our cookies.

TCY cookies are available in different sizes depending on how and where they’re being offered.

Designed for events, gatherings and larger orders where a smaller, convenient portion makes sense.

đŸȘ Retail Size | Approx. 2.75 oz
Our individually wrapped retail cookie, designed for availability through our retail partners.

đŸȘ Direct Order Size | Approx. 4 oz
Our most substantial cookie, created specifically for customers ordering directly from TCY.

Why different sizes?

Because a cookie for a catered event doesn’t necessarily need to be the same size as one you grab from a retail partner, and neither has to be the same as the cookie you order directly from us.

The recipes don’t change. The quality doesn’t change. The format simply fits the occasion.

As TCY grows and we give you more ways to purchase from us, we think it’s important that you understand exactly what we’re offering.

It’s a small change in how our cookies are offered, but one we wanted to let our regular customers know about before they see it on the shelf.

At TCY, we layer our cheesecake jars with intention.

We’re not masking flavors or simply adding something sweet on top of cheesecake. Each pudding flavor is chosen and developed to complement the rich, creamy cheesecake filling, while bringing its own flavor and texture to the jar.

The layers matter.

With our Biscoff Cookie Butter Pudding Cheesecake, you get the richness of cheesecake, the warm spiced notes of Biscoff, creamy cookie butter pudding, and a layer of Biscoff salted caramel that adds depth and balance. Even the crumbs have a purpose, bringing texture back into all that creaminess.

Each spoonful may catch the layers a little differently, and that’s exactly the point.

We don’t want every component to disappear into one flavor.

đŸȘ One Base Recipe for Every Cookie? Not in My Kitchen.

As we get ready to offer direct ordering, I want you to know a little more about what goes into the cookies you order from us.

Some bakers use one base recipe and change the extracts, mix-ins, or toppings to create different flavors. There's nothing wrong with that approach.

It's just not how I bake.

A snickerdoodle shouldn't have the same structure as a chocolate chip cookie. A peanut butter cookie behaves differently because peanut butter brings its own fat and solids. Shortbread relies heavily on its butter-to-flour ratio. Oatmeal changes moisture absorption. Cocoa changes a dough. Even the amount and type of inclusions can determine how much structure a cookie needs.

Sugar, flour, fat, eggs, leavening and moisture aren't just ingredients. They each have a job.

So when I develop a flavor, I don't automatically start with one master dough and ask, "What can I add to this?"

I ask, "What does this cookie need?"

Sometimes two flavors share a similar foundation. Sometimes they need completely different recipes. That's why you'll notice differences in the texture, thickness and bite from one TCY cookie to another.

As we begin taking direct orders, I want you to know that when you choose different flavors, you're not simply choosing different things added to the same cookie.

You're choosing cookies that have been developed to taste and behave the way that particular cookie should.

And for me, that's part of the craft of baking.

One year, several filtering attempts and a whole lot of patience later, I can finally answer the question: Is making your own vanilla worth it?

For me, yes. But I learned a few things along the way that those quick “make your own vanilla” videos don’t always tell you.

VALUE

Making your own can absolutely save money, especially compared with a good commercial vanilla bean paste. The tradeoff is time. If you want good strength and flavor, you have to be willing to wait. Mine has been developing for a full year.

EXTRACT

Vanilla extract is the easier part. Beans, alcohol and time. There are variables that affect strength and flavor, but the basic process is pretty straightforward.

PASTE

This is where I learned my biggest lesson:

Vanilla pod fiber does not disappear just because you put it in a blender.

Many homemade paste recipes tell you to pulverize the pods. You can grind them incredibly fine, but that fibrous material is still there. In cookie dough or cake batter, that may not matter at all.

In whipped cream, ice cream, coffee or anything where texture matters? It can be disappointing.

That’s why I went through several rounds of processing and filtering, and that pile in the photo is some of what I removed.

Would I do it again?

Absolutely.

Not just because I saved money, but because after a year of experimenting, I understand vanilla a whole lot better than I did when I started.

Sometimes making something yourself isn't just about saving money. Sometimes the real value is what you learn along the way.

WHAT I MADE FROM THIS BATCH:

‱ Tall bottle: Whole vanilla pods were split and scraped, with both the seeds and pods incorporated into vodka to extract.

‱ Small bottles: Vanilla extract made from pods that were ground and incorporated into vodka then filtered.

‱ Small jar: Vanilla bean paste made from the ground pods and then filtered to remove as much of the remaining fiber as possible.

‱ In progress: Vanilla bean simple syrup.

‱ Nothing wasted: The remaining vanilla bean material will be ground even finer and incorporated into sugar to make vanilla sugar.

One batch of vanilla beans, several different uses, and very little waste.

This was just leftovers from a few different batches that needed somewhere to go. Cookies & cream crumbs, cheesecake filling, and strawberry pudding all ended up in the same jar.

And somehow my “use up the leftovers” late-night snack turned into what I can only describe as a Neapolitan Cheesecake Jar.

And it is GOOD.

So now I’m sitting here eating my accidental creation and wondering if I need to apologize to Bryan
 because this one might actually be worth considering. 😂

A little heads-up for our Elliott’s Pizzeria customers! đŸȘ

With our next restock, you’ll notice our cookies are getting a little bigger. We’re moving to the larger single cookie size that many of you may already recognize from the Kentucky Proud Expo. So if you’ve had our cookies there, this size won’t be new to you!

The larger singles also give us room to expand the flavor lineup. Funfetti and Snickerdoodle will be joining the choices available at Elliott’s.

And we’re not stopping there. 🍂 Fall is getting closer, and I’m already working on our seasonal menu. Look for fall flavors to start making their way into the rotation around mid-to-late September.

Same cookies, just a little more of them. Keep an eye out for the next restock!
