Now THIS is the kind of breakfast that gets us excited 😍 Our spinach sausage Rise & Shine Bite starts with a gluten-free sourdough base that bakes into a soft biscuit-like bottom with crispy golden edges. Then we loaded it with savory sausage, sautéed onions, fresh spinach, egg, and Parmesan and mozzarella cheese for the perfect omelette-style bite.

These came out fluffy, cheesy, hearty, and packed with flavor in every single bite. The sourdough base gives them such an incredible texture that sets them apart from ordinary egg bites.

Quick to grab, packed with protein, and completely comforting while staying 100% celiac-safe 🙌 We seriously cannot wait to experiment with more flavor combinations because these are an absolute hit already 🔥

The Rise & Shine Bite ☀️🥚🔥

These turned out even better than we imagined 😍 Our new gluten-free breakfast bites start with a sourdough starter base that bakes into a soft biscuit-like bottom with the perfect texture and flavor. Then we top them with egg, cheese, and endless omelette combinations to create the ultimate grab-and-go breakfast.

The possibilities are seriously endless — bacon cheddar, sausage pepper jack, veggie loaded, southwest style, spicy jalapeño, ham and Swiss…you name it 👨‍🍳🔥

They’re fluffy, cheesy, savory, packed with protein, and completely satisfying while still being 100% celiac-safe. Honestly one of the most exciting breakfast creations we’ve made in awhile.

Flame-Grilled Bacon Cheeseburger 🔥🍔

Tonight’s dinner was a bunless grilled bacon cheeseburger loaded with melted cheddar cheese, onions, and creamy horsey sauce — simple, messy, and absolutely delicious 😍

Served with a side of Naked Flamin’ Hot Cheetos for the perfect spicy crunch to finish it off. Sometimes the best gluten-free meals are the simple comfort foods done right.

Midday Gluten-Free Fuel 💪🔥

Today’s lunch was loaded with protein, fresh fruits, and crunchy veggies — the kind of meal that keeps you full, energized, and feeling good without sacrificing flavor.

I packed my containers with low sodium summer sausage, a variety of cheeses, cottage cheese, and high protein yogurt for a serious protein boost. Then added a huge mix of fresh produce including strawberries, muskmelon, watermelon, ruby red kiwi, raspberries, carrots, celery, broccoli, cauliflower, and baby cucumbers 🥒🍓

One thing we’ve learned living gluten-free is that safe food doesn’t have to be boring. Meals like this are simple, colorful, nutrient packed, and easy to customize while still being completely satisfying.

A fresh, high-protein, gluten-free lunch that tastes just as good as it looks 🙌

Breakfast just got a whole lot better 😍🔥

Today we experimented with gluten-free sourdough breakfast bites using our brown rice & teff flour sourdough discard — and they turned out incredible.

We spread the discard about a half inch thick into a muffin pan and baked it at 375° for 8 minutes to give it a head start. Then we topped them with crispy bacon and sausage, egg, pepper jack cheese, pink Himalayan salt, and cracked black pepper before baking another 18 minutes until perfectly cooked and golden brown.

The sourdough base gave these bites an amazing flavor and texture — crispy edges with a soft savory center. Packed with protein and perfect for busy mornings.

Another fun experiment that turned into a huge win 🙌 these will be on the menu for sure stay tuned for different varieties, post a comment to have your favorite flavors added!!!

Tonight’s Gluten-Free Dinner: Tator Tot Casserole 🥘

Tonight Samantha made a comforting gluten-free tator tot casserole loaded with seasoned beef, creamy sauce, crispy tots, green beans, and plenty of melted cheese. Simple ingredients, easy to throw together, and always a crowd favorite.

Recipe & Directions

Ingredients:

* 1 lb ground beef
* 1 small onion, diced
* 2–3 cloves garlic, minced
* 1 can gluten-free cream of mushroom soup
* 1 can French style green beans, drained
* 1 bag Ore-Ida tator tots
* 2 cups shredded cheese
* Olive oil
* Pink Himalayan salt & cracked black pepper to taste

Directions:

1. Preheat oven to 425°F. Spread the tator tots on a baking sheet and pre-cook until lightly crisp while preparing the filling.
2. In a skillet, heat a little olive oil and sauté the onions and garlic until soft and fragrant.
3. Add the hamburger, season with pink Himalayan salt and cracked black pepper, and cook until browned. Drain excess grease if needed.
4. Stir in the gluten-free cream of mushroom soup and mix until creamy and combined.
5. Pour the beef mixture into a baking dish. Add the French style green beans evenly over the top.
6. Sprinkle with shredded cheese, then layer the crispy tator tots across the top.
7. Bake at 425°F until the casserole is hot and bubbly and the tots are golden brown. Add extra cheese during the last few minutes if desired.

Comfort food done gluten-free and 100% celiac-safe. 🔥

I never realized how impactful the emotional part truly would be.

We know healing isn’t always linear. The emotional experience of managing a lifelong chronic illness like celiac disease definitely isn’t linear either.

Even though celiac disease often becomes more manageable with time and experience, we will still have highs and lows.

Learning how to safely eat with loved ones can bring you to a new high, while getting glutened after years of experience and feeling like you should “know better” by now, the shame around that, can bring you to a new emotional low.

Some highs of a celiac diagnosis may include: finally getting answers, feeling healthy again, finding safe foods, creating community...

Some lows may include: food anxiety, feeling isolated, burnout..

Your mental health and emotional experience is a major part of healing from celiac disease. It’s important to name the feelings we are having so we can move through them.

Even people with years of experience and the very best access to care struggle sometimes.

Wherever you are on the journey today, your feelings are valid and you are not alone.

Tomorrow’s Gluten-Free Lunch: High Protein & Fresh Fruit 🍓🥝

Keeping lunch simple, filling, and packed with protein.

I had lemon garlic pepper chicken breast over a scoop of baked beans with cottage cheese, a couple slices of cheese, and a high protein yogurt.

Samantha had BBQ seasoned chicken with cottage cheese.

For fruit we both had kiwi, strawberries, muskmelon, and watermelon for something fresh and refreshing alongside the protein.

One thing about living gluten-free is planning ahead. Having safe meals already prepared makes lunches easier and helps avoid the risk of cross contamination when you’re busy or away from home.
