Making butter for household use. This is a great way to use up whipping cream nearing its expiration date.

Ingredients (can be scaled down)
48oz cold whipping cream
1.5 teaspoons sea salt
Cheese cloth (optional)
Ice water

Whip cream for about 10 minutes, or until it curdles and begins to separate. Strain the buttermilk with a sieve and press as much liquid as you can from the butter.

Dump the butter curd into a bowl with some ice water - squeeze and rinse the butter. Trash the remaining water (or water your plants with it)

Squeeze out the remaining water from the butter with a tea towel or cheese cloth.

Fold in salt (and herbs, if desired)

Optional: shape or press into molds.

Stores 6 weeks in the fridge, 9 months in the freezer.
