Hello All! It’s been a long time. Honestly, the year has been a little hard on us. Ritter and I both sustained server leg injuries this year and have been laying low.

However, it’s time to get back up and get back in the kitchen. We can not open full time but we will be offering select dates for delivery to begin paying off the expansive medical bills.

As fall approaches it’s time for cinnamon rolls. We will be offering no contact take and bake cinnamon roll delivery to your front door Sept 19 and Sept 26 .

We will be offering Traditional, Gluten Free and Pumpkin Pie Filled Rolls.

P A R T O N E: The Cake

Ingredients:
3 cups flour
2 cups sugar
2 Tsp Baking Powder
1 Tsp Salt
1 cup Butter
4 Eggs
1 cup milk
1 Tsp Almond extract
1 Tsp Vanilla extract
1/4 poppyseeds

Instructions:

Prepare you two 8” round cake pans. I coat the pans in a generous amount of butter and flour. You can also use parchment paper. Pre heat over to 325*.

Stir together 3 cups flour, 2 cups sugar, 2 Tsp baking powder, 1 Tsp salt. Mix in 1 cup of soft butter chopped into small squares. With mixer combine until the flour and butter mixture is the texture of sand.

In a set of separate bowls. Separate 4 egg yolks and egg whites. Beat egg whites to a stiff peak, set aside.

In a liquid measuring cup combine 1 cup milk, 4 egg yolks, 1 tsp of vanilla and almond extract. Add to flour mixture and stir for 2 minutes.

With spatula fold egg whites and 1/4 cup poppyseeds into the cake mixture. Do not over mix. Cake batter should be light.

Bake cakes on the middle rack of your oven for 35-45 minutes. Depends on your oven and altitude. To ensure it is cooked insert a tooth pick into the middle of the cake. Tooth pick should come out clean.

Allow cake to completely cool before decorating!

I will now be back with weekly recipes. I’ve been MIA due to breaking my ankle...

Last month while driving to Missoula to celebrate my nephew turning four years old. I stopped at a rest stop east of Look Out Pass. It was a beautiful morning. Ritter and I were heading back to the car when I slipped on a small patch of ice. Loud snap and pop. Excruciating pain. My ankle was facing the opposite direction.

I was alone with no cell phone reception available. 🆘 not working. It was freezing and I was stuck on the side walk. stayed close as I tried to pull myself to my car.

A man stopped, I later would find out his name was Donny, and asked if I was ok. He saw my ankle and told me he would be back. He drove down the mountain to call for an ambulance. While Donny was driving to call in help. A man named Chris got out of his truck and got Ritter and I to my car. He got my car turned on and got me wrapped in a blanket.

Donny returned confirming that he had gotten ahold of the paramedics and they were 45 minutes to an hour away.

He stayed near by, checking in every few minutes.

A team of volunteer EMTs arrived, they could not transport me but were able get my vitals and support my ankle.

Once the ambulance arrived, Donny and the emts helped load me onto the gurney. Donny then got Ritter and asked them to please let him go with me. They agreed!! So Ritter rode to Superior watching over me in the ambulance.

Once in Superior, I went into shock, the team was amazing getting me stable. They had to put me under conscious sedation to reset and stabilize my ankle and fibula.

Meanwhile, the sheriff was able to contact my family. Everyone jumped to help. They got my car, set up a comfortable area for me to rest. Picked up prescriptions.

Every person who helped me was amazing. Complete strangers, didn’t have to stop and help me but I’m so glad they did! Faith in humanity restored.

I have now had surgery and am in physical therapy. Hoping to be walking in four weeks.

C I N N A M O N R O L L S

- Brown’s Basics Cinnamon Rolls

For the dough
- ¾ cup warm whole milk
- 2 TBs honey
- 2 ¼ teaspoons quick rise or active yeast
- ¼ cup granulated sugar
- 1 egg plus 1 egg yolk
- ¼ cup unsalted butter, melted
- 3 cups flour, plus more for dusting
- 3/4 teaspoon salt

For the filling:
- 2/3 cup dark brown sugar
- 1 ½ tablespoons ground cinnamon
- 1/2 Tsp nutmeg
- 1/2 Tsp ginger
- 1/2 tsp cardamom
- 1/2 cup unsalted butter, softened

- For the cream cheese frosting:
- 4 oz cream cheese, softened
- 3 tablespoons unsalted butter, softened
- ¾ cup powdered sugar
- ½ teaspoon vanilla extract

Directions:
- Stir honey into warm milk
- Sprinkle yeast on top of milk, after a few minutes the yeast should activate and appear bubbly.
- In a standard mixer with dough hook combine flour, sugar, salt, butter and eggs. Stir to combine.
- Pour in milk mixture and allow mixer to work the dough for 5-7 minutes until a ball forms and nothing is sticking to the sides.
- Place the dough to α lightly greαsed mixing bowl. Cover with α towel αnd let rise until double in size, αbout 1 hour.
- Lightly greαse α bαking sheet. Punch down the dough αnd roll into α 12x18 inch rectangle.
- Brush the dough with 1/2 cup melted butter. In α smαll bowl, combine the brown sugαr αnd cinnαmon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you hαve one long roll. Use a shαrp knife to cut the dough into 12 one-inch slices.
- Plαce the slices onto α 9x13 pαn. Cover αnd let rise 30 to 45 minutes.
- Preheαt oven to 325 degrees. Bαke the rolls for αbout 18 minutes, until brown on top.
- While the cinnαmon rolls αre bαking, mαke the creαm cheese glαze by using α mixer to whip together creαm cheese αnd butter until light αnd fluffy. Whip in powdered sugαr αnd vαnillα extrαct.
- Top cinnamon rolls with cream cheese icing while still warm.
- Enjoy.

Hello All!

How are you? My month off of social media was a well needed to adjust a refocus. The Bakery in will be back one day, it will take some time and We will have to shift focus to other areas to save for a space. However, in the mean time. We will post recipes two to four times a month. Please comment on what recipes you would love to see posted.

In quarantine Baker reconnected with her love of sewing and minor in fashion design to create a line of sleepwear that is for sale . Thank you for following!

Brown’s Basics Snickerdoodle Recipe: Sub to make these GF!

1 cup unsalted butter softened
1 cup granulated sugar
1 large egg
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cream of tartar
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
FOR THE COATING:
1/2 cup granulated sugar
2 TBS ground cinnamon

Preheat oven to 350°F. Line two cookie sheet with parchment paper.

Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer). Cream until the mixture is fluffy, about one minute.

Add the egg, vanilla and mix until smooth, then add in baking soda, cream of tartar, and salt.

Add flour and mix until thick.

In a separate bowl stir together sugar and cinnamon for coating in a small bowl.

Scoop 2 tablespoon balls of cookie dough and roll between the palms of your hand. Roll in cinnamon sugar and place on cookie sheet.

Bake for 10-13 minutes or until they are cracked on the tops.

This cheesecake is perfect for any holiday! Pictured is our Christmas themed cheesecake.

You could use white, silver and blue for New Years. Red and white for Valentine’s Day. Red, White and Blue for the 4th of July. Bake it for a birthday party with pink, yellow and green. The combinations are as varied as your imagination.

This cake is the perfect creamy texture and I’m not just saying that because I’m having it for breakfast with my coffee. It is the best cheesecake recipe to date.

S U G A R C O O K I E S

Soft and chewy sugar cookies are my favorite this time of year. This is an easy recipe the whole family can enjoy.

Ingredients

1 Cup unsalted butter
1 1/4 Cup granulated white sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
3 cups all purpose flour

PREHEAT oven to 350° F.
In the bowl of your mixer, CREAM butter and sugar until smooth. Add in extracts and egg.
In a separate bowl, COMBINE baking powder and salt with flour and add a little at a time to the wet ingredients.
Mix until combined and dough is pulling away from the side of the bowl. Cover and chill 10 minutes.

Roll dough out on a lightly floured surface and use cookies cutters to make your favorite shapes.

Bake at 350* for 6-8 minutes. Cookies will be light in color.

Icing:

2 cups powdered sugar
2-3 tablespoons milk
2 teaspoons light corn syrup (for a glossy set icing)
1/2 teaspoon vanilla extract
Gel food coloring

Mix Sugar, milk and corn syrup until smooth. Divide into separate bowls and add gel food coloring. Use pastry bags to decorate your favorite shapes.

Brown’s Basics Foods was established in Missoula MT in 1979 by Mike and Valerie Brown. They ran a successful grocery store and had hopes to expand into coffee shop and bakery. Three daughters and 28 years later Brown’s Basics is being revived.​

Brown’s Basics Bakery is a small batch custom order bakery. The kitchen is a 120 square foot food cart. We are proud to offer the highest level of service by creating delicious items exclusively for each customer.

We are open at the 9th Street Village. We pride ourselves on offering from scratch pastries, desserts and breads. Sandwiches made on fresh baked bread with local and or organic meats and cheeses. We use the highest quality ingredients and serve a seasonal menu for optimal taste.
