Caramel apple pie cake π
I use buttermilk cake layers for all my cakes.
Hereβs the recipe:
2 3/4 cups sugar
1 cup butter ( I use salted butter )
1/2 cup shortening
5 eggs
Room temp. Mix the sugar, butter and shortening together until creamy. Add the eggs one at the time.
3 1/4 cups flour
2 teaspoons baking powder
Salt ( if using unsalted butter or if you want a little more salt in )
Mix it together.
1 cup buttermilk
2 teaspoons vanilla
Mix it.
Add 1/3 of the flour mix to the buttery mix and than 1/3 of the buttermilk than the rest of the flour and buttermilk. Donβt over mix.
Bake in preheated oven ( 350Β°) check it after 25 mins. With my new oven it takes much longer. keep your eyes on it. I baked it in 3 cake pans 8 in each. Or 4 pans 6 in.
The caramel sauce
1 cup sugar
6 tablespoons butter
1/2 heavy cream
Melt the sugar in a saucepan, make sure to stir it the whole time. When it reaches the desired color add the room temp cubed butter, when itβs all melted add the heavy cream. I like to microwave the cream a little before adding so itβs not going to foam as much ( maybe itβs just in my head..)
It makes a lot. If you wonβt use the whole thing, you can add a little lemon juice with the sugar so it wonβt crystallize. You can store it in the fridge for a few weeks in jars.
The apple filling is, if you have a favorite apple pie filling go with that( make it a little less juicy) If not, this time I cubed the apples, put them into a pan with a little water, cinnamon, nutmeg, all spice, and start cooking them. When they are soft I added the caramel sauce. I like to used tart apple, I think itβs a nice touch.
Buttercream;
1 cup softened butter
3-3 1/2 cups powdered sugar
Vanilla
1-2 tablespoons HOT cream or milk or even water.
You will need more buttercream.
