It was a bittersweet day saying goodbye to Maddie, who had her last day working on the bakery counter yesterday. She’s headed to college and we expect to see her on breaks. Maddie is a 🌟 on the bakery counter and we’re so sad to see her go, but so proud of her! Seems like just yesterday she was hired as a sophomore 🥹🥲 To celebrate the bakers made her a jumbo chocolate chip cookie! Here’s “Maddie and her managers” ❤️❤️❤️

It’s CORN!! 🌽 we say farewell to strawberry rhubarb danish, hello blueberry corn danish! Our baking team have created a corn frangipane - no nuts in this - made with cornmeal, corn flour, roasted corn, and a corn liqueur. Topped with blueberry compote. Hello peak summer!!

We have two very exciting new pastries to share tomorrow! First up, after many many tests, is this divine coffee kouign amann layered with decaf espresso with dulce de leche in the center. The extra butter and sugar layers caramelize throughout making this crispy and flakey. Truly a labor of love from our viennoiserie lead Nancy ! Kouign amanns are weekends only :)
