Soft Strawberry Cheesecake Cookies
Ingredients:
1 1/2 cups of all-purpose flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of unsalted butter, softened
1/2 cup of cream cheese, softened
1 cup of granulated sugar
1 large egg
1 teaspoon of vanilla extract
1/2 cup of freeze-dried strawberries, crushed into powder
1/2 cup of white chocolate chips (optional)
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate large bowl, beat together the softened butter, cream cheese, and granulated sugar until smooth and creamy.
Add the egg and vanilla extract to the butter mixture, beating until fully combined.
Gently fold in the crushed freeze-dried strawberries and white chocolate chips, if using. Mix until the dough is evenly colored and the ingredients are well incorporated.
Gradually add the dry ingredients (flour mixture) to the wet ingredients, mixing until just combined. Be careful not to overmix.
Scoop tablespoon-sized portions of cookie dough and roll them into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
Gently press down on each cookie dough ball to flatten slightly, as these cookies don’t spread much while baking.
Bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
