Will there be more pizza nights? Yes, absolutely! Summer 2021 when the days are longer, we’ll be back at it, in the meadow with tables and music as the sun sets.
In the meantime? We’ve always said that Naga Bakehouse is “consistently inconsistent.” What that means for us is that we keep creative control; we can work with what’s in season, try a new recipe or combination and constantly have the flexibility to reinvent ourselves, our products and our venues (think pizza in the meadow).
What this means for you is that we hope you’ll join us as we take the time to create our next endeavor. It’s time for us to hunker down and turn our attention towards a new project: a flour mill that re-establishes our local and regional grainshed. We’re calling it Spoon Mountain Millers. The mill will work directly with farmers and with Naga Bakehouse to establish a resilient supply chain that connects the farmer, the miller and the baker.
We are currently working with several farmers in the area who are growing grains and other staple foods. Think about being able to access ancient varieties of wheat, rye and other staple foods that are grown and processed right here in your neighborhood. The other choice? Commodity grain grown thousands of miles away in the Midwest which is then sent to giant facilities that use roller mills, add bleach and create the white dust we call flour. Think instead about small scale, carefully tended and locally grown grains that are ground slowly into fresh flour. The resulting flour smells rich and hearty and keeps more nutritional value intact.
In the near future we’ll be offering frozen pizza to warm up at home, top your own crusts, many kinds of freshly ground flour as well as mixes; pancake, brownie, you name it - all made from grains grown in our foodshed. And, a winter bonfire or two (yes, with pizza!), so stay tuned.
