Back in 2015, the SoFlo Cake and Candy Expo was born out of a desire to revive the cake expo industry. With the help of friends, family, loyal attendees, and some blood, sweat and tears, over the past 10 years the show grew from an impossible dream to one of the best cake expos in the world.

As our families and businesses have grown and our day jobs have continued to occupy more and more of our time, the SoFlo Team has decided it is time to move on to new ventures, and maybe catch up on some long overdue rest.

We want to thank everyone from the bottom of our hearts who trusted us in the beginning and stuck with us year after year.
SoFlo could not have been possible without all of our amazing vendors, talented instructors, enthusiastic attendees, volunteers, friends, and families. There are no words to truly express our gratitude to all of you, so we will simply say

CLASS SPOTLIGHT: Painting on Ganache - Watercolor Technique (Sun, 8am-1pm)

During this workshop students will learn:

*How to make white chocolate ganache to use as a canvas for painting , Instructor will DEMO the recipe and students will work with pre-made ganache.

*How to cover a dummy cake and achieve sharp edges without the use of acrylic discs.

*How to mix and prepare colors to achieve realistic looking effects in your designs.

*How to transfer any design onto your cakes, technique that you can use in any other edible medium.

*How to work with wafer paper to create a nice magnolia branch.

* How to place the wafer paper decoration on your cakes to enhance your designs.

*Also students will receive a buttercream recipe developed by me that they can use as a canvas for painting as well.

CLASS SPOTLIGHT: Tilted Taco (Sat, 2:30pm-5:30pm) Teens 12+ & Adults

This class is a fun and interactive introduction to structured cakes. You will learn how to create a structure that is easily made and recreated. You will also use this idea to create many other fun tilted cake ideas.

The Tilted Taco class will not only teach you about structure, but you will also use REAL cake in the class, learn how to ganache a cake, smooth the ganache and prepare for fondant decoration. You will also learn how to use fondant to create realistic food-like decoration , to fool the eye of your family and friends ! In this class we will use cake , ganache, fondant, gumoaste, edible dusts and edible paint.

I hope you can join us for a fun take on the Taco Cake -- taco cakes have been made over and over and over - BUT yours will be the only one that you can prank others with !!!! Imagine all the fun memories you will create with your creation before you even eat it !!!

In this fun-filled three hour course, participants will hand sculpt an animated figure utilizing fondant, gum paste and modeling chocolate. By the end of this session, each artist will learn the necessary skills to construct, mold and assemble Ellie Elephant.

The methods practiced in this course can easily be adapted to other fondant figures by applying the techniques and planning principles presented. Adding this skillset to your sugar toolkit will increase your marketability and skyrocket your overall revenue potential. Are you intimidated by isomalt? Then this class is for you! In this class you will learn about basic isomalt techniques including pouring, casting, pulling, and blowing sugar. There will be several mini projects taught in this class, most of which are sea-themed. In this hands on class students will learn how to create a lifelike wafer paper flower. They will learn how to condition, vein and color petals and leaves using simple tools & techniques (alcohol free & no special ingredients needed). All parts of the flower including the stamens and center will be created from wafer paper.
