These Sourdough Vanilla Cupcakes with homemade Buttercream Icing needed a moment on the gram. BEST CUPCAKES EVER! And the whole Lego gang showed up to indulge too. 🧁🥳

I used Lisa Bass Sourdough Vanilla Cake Recipe but in cupcake form. Bake time was 22 minutes. It was a real winner!

I've gotta thing for Sunday dinners. It's my favorite day of the week! Permission to rest, do puzzles, spend time together and most importantly, devour a homemade meal. We made homemade ramen bowls with our girls eggs and some pork belly from Urban Butcher! 🍜

🌾 Interesting facts about Einkorn Grain!🌾

It’s one of the oldest cultivated wheats.

It is considered one of the earliest forms of wheat cultivated by humans holding the original 14 chromosomes.

Einkorn isn't simply a modern wheat variety that has been minimally processed, it is a genuinely different wheat species.

It has a naturally yellow color.

It's VERY nutrient-dense. Einkorn provides protein, fiber, minerals, and carotenoids. Its nutritional profile can be quite different from conventional modern wheat.

It can be easier to digest for some people. Some people who experience digestive issues with conventional wheat report tolerating einkorn better.

It is NOT gluten-free or safe for people with celiac disease.

Its gluten behaves very differently. Einkorn dough tends to be less extensible and sticky rather than strong and elastic. It doesn't develop the same robust gluten network as modern bread wheat, which is why einkorn sourdough can behave very differently during mixing, fermentation and bake.
It generally has less gluten strength. This is actually one of the biggest challenges when baking with 100% einkorn, which is why I blend.

It has a distinctive flavor. Einkorn tends to have a rich, nutty, buttery, slightly sweet flavor, which is one reason people love it for sourdough.

Other popular ancient grains are Spelt, Emmer, Farro & Khorasan. So much to love about this ancient grain! 🌾♥️
