The smell in my kitchen right now!!!!!
Sourdough has a mind of its own. Yesterday I started making this loaf and time got away from me and I rushed out the door after adding the salt and doing 1 stretch in fold (I don't add salt at the beginning). By the time I had gotten home it had been proofing for 7 hours. I did a quick stretch and fold to make sure the salt was incorporated and let her sit another 4 hours. The shaped her and put her in the fridge. does not have to be complicated.
