I've been trying, testing and tasting a lot of new French yummyness this summer! Novelties for the fall?

The madeleine is a traditional small cake from Commercy and Liverdun, two communes of the Lorraine region in northeastern France.
Madeleines use a génoise cake batter similar to, but somewhat lighter than, sponge cake. They have a distinctive shell-like shape. Traditional recipes usually include lemon zest, for a pronounced lemony taste.

Sablé is a French round shortbread biscuit, originates in Caen, in the province of Normandy. The French word sable means "sand", perhaps relating to these soft, delicate, crumbly texture biscuits and their golden colour.

Those are lemon-basil sablés.

A tuile is a thin, crisp sweet cookie. Originally from France, 'tuile' means tile in French, and is named after the shape of French roof tiles it is supposed to resemble, particularly those in Provence.

A canelé is a small French pastry with a soft and tender custard center and a dark, thick caramelized crust. The dessert is a specialty of the Bordeaux region of France but can often be found in Parisian patisseries as well.
The canelé requires a long process. The batter has to set for 12 hours and bake for 1h. But the caramelized crust and the rum and vanilla flavors, are definitely worth it!
