How it all began...

Now I want you to know I didn't always dream of or think I would have a baking business. It honestly took up until a few years ago for this dream to come alive in me. Working my life away for other people and not doing what I love is what inspired me to make this dream happen. Fancy Sweets by Ashley has been open from my home now for just over a whole year! now I'm starting to pass the baking legacy onto my kids. !! How perfect for me!? I began to learn about Grammas Amish background, then later her Mennonite background, and all the amazing tricks and techniques to baking beautiful Amish & Mennonite Yeast Breads, sweet breads, cakes, chocolates, fudge, jams, even syrups & candies. I really love & appreciate first that my gram took the time, effort, & energy to pass such an amazing trade onto my mom, but also myself. So anything I didn't learn from Gram I then learned from mom! I feel so blessed to be handed down this trait, this epic legacy of hands on, hard work, & homemade baked goodness straight from the heart. Best of all, now I get to hand down this baking legacy to my girls! Its been 25 years now of practice & improvement, I moved on to Southern Baking in my late teens, & soon after in my late 20’s delved into French & Italian, and now I'm stuck in Europe! I don't ever want to leave! I love the process, the care, the heart that I feel in European baking. So much time & effort is put into even the smallest of desserts, and the result is breathtaking but also mouthwateringly perfect. No other baking genre will ever measure up again, I’m positive. I will always love the quality & finesse behind the European pastry’s look, texture & taste the most.

Working my life away for other people, not doing what I love, not having enough time with my girls, with my husband, THAT is what inspired me to make this dream happen. I wanted more then the usual. More then the normal 8-5 Monday - Friday life. I didn't have time to pass anything on to my girls. I didn't have time to feel creative in my baking, in fact I didn't have time to even bake! I knew something had to change, and I knew it would be the key to improve our families quality of life. I wanted to be at home more with my girls, Noelle & Audrey, instead of them being in daycare or with family 4 to 5 days a week. I wanted to be able to watch them grow & be a part of the process. I wanted the time to teach them love & life. I wanted to feel less tired at the end of the day so when my 5 year old just wants to play dolls & connect with me, I’m in a happy & healthy enough space to easily get down on that floor with her. Opening Fancy Sweets by Ashley has been the answer to all my time problems. I choose my own hours, so I get enough time to even cook my kids breakfast every morning, no boring cereal here! I have slowed down our lives enough to have fun while learning life together, even connecting more deeply with my kids & husband. I’m able to stay more on top of house work & set our days up for success because I have the time! I’m even better at managing my time! Whaaaaaat?! Best of all, we are happier, we are healthier, and I am now doing what I love, Baking the world a better place one macaron at a time! Its been just over a year now that I have been open. In that year I have learned a lot about myself, this business, what works, what doesn't, a lot of trial & error, a lot of hard work, and all to blossom beautifully into what it is today, your local homemade macaron bakery!
